Pinto Beans in the Slow Cooker

I love recipes that require little effort, that you can pull the ingredients out of your pantry at a moment’s notice, and taste heavenly!   This is the recipe.  Easy, easy, easy and good, good, good!  I cannot tell you one time that I have had pinto beans other than a Mexican restaurant.  My mother always made black eyed peas, but no pintos or black beans.  Well, now I have broadened my horizons or rather my tastebuds.  I love this recipe and have made it several times now and each time there is not one spoonful left and there are just two of us eating these beans.  I made homemade cornbread, but also being the nutrition teacher that I am I sauteed spinach with a little olive oil, garlic, and red pepper flakes and topped it with a squeeze of fresh lemon juice.  Oh, my gosh!

Milk Chocolate Pudding

Wow!!!  This milk chocolate pudding is good in so many ways.  15 minutes flat from measuring to refrigerating and you are done!  The short time factor did nothing to compromise the wonderfully rich homemade pudding taste.  It is absolutely out of this world.  And for your sake don’t wait a year and a half as I did before you put this magic potion together.

Dream Bars

One of my best childhood memories is my hometown bakery.  My sister and I would stop by on our way home from school almost everyday.  I had quite a few favorites such as huge butter cookies, cream horns dusted with powdered sugar, and date nut bars.  All of the above were enjoyed with a Tab or a big cup of coffee depending on the season and the weather.  I have been searching for the recipe to make the perfect date nut bars and this one is pretty close.  The bottom layer is similar to a shortbread cookie and the top layer is a mixture of dates, coconut,  and nuts.   Delicious!    Sorry, but I’ve got to run.  I brought home school work which is calling my name.  I have about 400 papers that are graded, but have not been put into the gradebook.    So I am off to do my real job!

Chocolate Toffee Bark

Here is another one of those recipes that I must have been buried under a rock for part of my lifetime.  It has been out there forever, but I’ve never had it.  Last weekend we got together for one of our family luncheons and Ken my sister-in-law brings in lots of goodies.  This being one of them and I just had to nibble before lunch and oh my!!!  This stuff is fabulous!  Then I was blown away when she told me the base was saltine crackers.  Unbelievable!  I knew right then and there that I would have to make it and I am not a candy lover, but this is really good.

Garlic and Cheese Drop Biscuits another Lab

Looking for an easy way to make biscuits?  This is just the recipe for you.  I don’t really think that you can mess this one up unless of course you add more milk than you should and you end up with Garlic and Cheese pancakes.  That doesn’t sound t0o appetizing does it?  I have had a couple of groups to do this!    No seriously, this is a no-fail recipe for those who are inept at kneading the dough.  In the time that it takes the oven to preheat all the grating (if you choose) and mixing can be done.  The baking time is quick, too, 8- 10 minutes.   This is a winner no matter how many times you make it.

Mixed up Popcorn

The name says “mixed up” popcorn, but I really think that it is “kicked up” popcorn.  This is good stuff.  Just for your information this stuff is very addictive.  I don’t really care for caramel popcorn, but this is more on the side of popcorn and other stuff covered in pralines.  I first had this several years ago when I last went on a real vacation.  You know the kind where you stay for a week or more and read several books while sitting in a chair with the beach breeze gently blowing your hair.  The kind of time that you never want to end.  You have no trouble sleeping.  Work is someone else’s problem.  The only decision that you have to make is what are you’re having for dinner.  I need that right now.  Anyway, Anna made this Mixed Up Popcorn for our vacation and it was a fight for the last bite. It is that good!

Fish Fillets with Olives and Oregano

I’m always looking for a light dish that packs a lot of flavor and that’s quick.  I don’t think that I’m asking for too much.  After all,  working out at the gym or going to tennis practice takes a chunk of time.  I think it’s important to work out but, let’s face it a girl has to eat.  I simply loved these fish fillets.  Gourmet knows how to make me happy in the kitchen!   Continue reading

Mayonnaise Rolls

This school year has been quite a challenge for me for many reason that I won’t go into because  I am working so hard  to be a positive influence in my classroom. My students are absolutely wonderful!  With the exception of a handful,  all of them signed up for my class to learn how to cook.  I have a large number of seniors that will be leaving their families for college next year and they want to be able to cook for themselves.  I applaud them!

Lemon Crumble Squares

Without intending to I am cooking my way through my Macon Jr. League Gracious Goodness cookbook.  There is not a recipe that I have tried that has not exceeded almost perfection.  Here is yet another one that I first cooked in the sweltering heat of July.  You know one of those days when anything cool feels good going down.  There’s nothing better than tangy cool lemon pie and what makes this one even better is the oatmeal crust.   And to top it all,  there is no fork required.
