Chocolate Chip Rum Cake and Pot Lifters

I have the best cake recipe for you today.  It is going to knock your socks off!   Don’t look at me sideways, but it’s made with a cake mix.  Yes, it is true.  I didn’t believe it myself when I tasted it.  I just knew my friend Marilyn was lying, but no she doesn’t lie!    It is like a big  chewy brownie  with a hint of rum,  chocolate chips and nuts.   Now who is not going to love it?  When you take a bite you are going to think that you have died and gone to heaven – chocolate heaven that is.

Coffee Cake

I ask myself, do I really have a part-time job? When I get off at 12 it seems to me that I have worked all day.   I’ve taught 4 classes and have seen 125 students. It is  nonstop for me and time just flies by.    My hours are 8-12, but at 12 it is just like I have another job!  I am busy to the point that I wonder what happens to my free afternoon.  With more time I find myself with less time to just relax!  It seems that I don’t have time to enjoy my front porch with a good book or eat lunch on my deck.  I haven’t plugged in my sewing machine in 2 years!  In the three years that I have had this blog many hours have been spent writing, planning, shopping , cooking, eating, and learning to use a camera.  Thank goodness that I do have a busy life.  What would happen to me without all this stuff to do????  Now for the recipe for this wonderful Coffee Cake that my sister-in-law gave me years ago that has saved my life for many showers, brunches, and for something sweet at 10:00 o’clock at night!

Sock-It-To-Me-Cake

This recipe is a blast from the past!  It is the Duncan Hines Sock It to Me Cake.  What a name for a cake!  If you are into music or not you probably  know  this line from Aretha Franklin’s song RESPECT.  It was released in 1967.  Then in the 70’s Laugh In used it as a catch phrase in their show.   No matter how the cake got its name it’s really good.  I’m not a big fan of  cake mixes, but this one is worth the time.  It is super easy and really good.

Chocolate Mayonnaise Cake

I have turned up my nose at this cake for years.  Who in their right mind would bake a perfectly good chocolate cake with mayonnaise?  Mayonnaise goes on a great hamburger,  in Southern pimento cheese  or in your best chicken salad, but a cake no way!   After making Mayonnaise Rolls for my students I had a lot of mayo left over and decided after being bombarded with the advertisment for this cake that I would actually try it.  Tell me that ads don’t have power over the mind because that’s the only reason I tried the recipe.  Who can resist the way the cake looks in the ad just so mouthwatering and  moist!  So here is the lowdown on the mayonnaise cake.

German Chocolate Cake

This is one of my favorite cakes to make during the holidays.  It brings with it lots of memories.     My dad loved it.  Now I ‘m not one of those sweet lovers, even though I do love to bake.  But, I have been known to cut myself a huge piece of this German Chocolate Cake and love every moment of indulgence. There is nothing like it.  The coconut pecan frosting and filling is heavenly by itself, but with the sweet German chocolate layers it is completely sinful!   Putting this recipe together takes a  little more time especially when the baker (being me)  seizes the chocolate and then has to make a run to the grocery, which is a fifteen minute trek one way.

Apple Upside-Down Cake

This month Cooking Light featured apple recipes.  Well, I can tell that I was a happy person.  For the last month I have received a huge bag of apples in my CSA box and there is just so many that I can eat for lunch or a snack.  This Apple Upside- Down Cake caught my eye for more reasons than one.  A one layer cake is great for serving to four people.  Then you have no leftovers to eat when your company leaves.  Remember I still have five pounds to get rid of.  It is a gorgeous cake!  It is a light cake with a lot of flavor.  And it is pretty easy to make.

Hummingbird Cake

The first time I encountered this wonderful cake was on a romantic dinner with GI Joe!!!  He took me to Dailey’s for dinner before a show at the Fox.  The night was what can I say other than just plain great!  Sorry to say that Dailey’s closed this year so we can no longer experience their wonderful desserts.  But we can treat ourselves to the delicious cake that they served.   After that night we took the Athlete there before seeing the Christmas Carol and to this day it is his favorite dessert!  So here is a family favorite for many reasons.  I hope that you can enjoy as much as we have.

This is not your normal cake where you cream butter and sugar and then add flour alternately with liquid.  It is made by the muffin method of mixing.  In other words it is just plain easy!!!

Chocolate Pound Cake

 

This is the best Chocolate Pound Cake that you will ever make!!  The recipe came from the Goodness Gracious  Cookbook by The Junior League of Macon, GA.  given to me by my sister-in-law.  I have made this recipe maybe a million times.  I am not exaggerating.  Well,  maybe a little.  I made this several years ago for a very dear friend of mine .   I volunteered to make the groom’s cake for her daughter.  What in the world was I thinking?   I practiced so much that we were sick of it!!!  You won’t get sick of  it though.  It is a great pound cake with the best texture and chocolate flavor.  Oh, my it is fabulous!!
