Mixed up Popcorn

The name says “mixed up” popcorn, but I really think that it is “kicked up” popcorn.  This is good stuff.  Just for your information this stuff is very addictive.  I don’t really care for caramel popcorn, but this is more on the side of popcorn and other stuff covered in pralines.  I first had this several years ago when I last went on a real vacation.  You know the kind where you stay for a week or more and read several books while sitting in a chair with the beach breeze gently blowing your hair.  The kind of time that you never want to end.  You have no trouble sleeping.  Work is someone else’s problem.  The only decision that you have to make is what are you’re having for dinner.  I need that right now.  Anyway, Anna made this Mixed Up Popcorn for our vacation and it was a fight for the last bite. It is that good!

So this weekend I was responsible for bringing something salty for my tennis match on Sunday and thought that this recipe would be perfect.  It almost did not make it out of my house.  I am not kidding you when I say that it is addictive.  You just have to have one more bite.  The pecans are toasted perfectly.  Everything is covered in this praline like sweetness that is just heavenly. You don’t need a good reason to make this.   Just do it!   Kids as well as adults love it!  So there you’ve got the recipe go for it.  It is totally worth it!   Just have some friends there to remove it from the table before you eat all of it.

Mixed Up Popcorn from Anna

  • 6 cups popped corn ( 1 – 3.3 oz. bag of microwave popcorn will make more than is needed)
  • 3 cups bite size rice cereal squares
  • 2 cups Cheerios
  • 1 1/2 cups salted nuts
  • 1 cup pecan halves
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/4 cup light corn syrup
  • 1/4 teaspoon baking soda
  • 1 teaspoon vanilla
  1. In a large bowl mix popped corn, cereal, cheerios, nuts, and pecan halves.
  2. Over medium heat in a medium sized heavy saucepan bring to a boil  brown sugar, butter, and light corn syrup stirring constantly.  This will take about 15 minutes.
  3. Boil for 5 minutes without stirring.
  4. Remove from heat and add soda and vanilla.
  5. Pour over the popcorn and cereal mixture.  Stir gently.
  6. Pour into a jelly roll pan.  ( I used two rimmed baking sheets lined with parchment paper)
  7. Bake at 250 degrees for 1 hour.
  8.  Cool completely before storing in a tightly covered container.
  9. Enjoy!

    This seems like a great idea to make something other than your everyday microwave popcorn. The mixture of nuts, cheerios and rice cereal sounds very good especially when covered in butter. Reading this taught me that you must completely cool food before storing it.

    I was surprised that corn syrup was used in the recipe. I’ve never really used corn syrup when cooking because I was afraid it was too thick or sweet to really put in anything, but now I know a recipe I can use it in that I’m sure I won’t mess up. I believe this is a very easy and simple recipe to follow.
