Pecan Buttermilk Fudge

Buttermilk fudge

I cannot make candy ! My husband loves divinity and I have never had any luck with it.   When I bought my Kitchenaid mixer I had this idea of grandeur thinking that with a new mixer that I could now make divinity.  After three attempts in one day I just gave up.  I’m just not a candy maker.  When I saw this recipe in Bon Appetit all my failures from making candy  just disappeared from my memory.  I can do this.    It looked so delicious. It can’t be that difficult.   Finally for me success at making the best Fudge ever!   This is a great candy for the holidays.  Use it for gifts or just eat it all yourself.   To top it off it is really easy.  You’ll just need a candy thermometer.

Carrot Cake

 

Carrot Cake

I saw this cake in Cook’s Illustrated a couple of years ago and was so intrigued with the method of putting it together.  I just had to try it because it makes serving cake so easy and the cake is so beautiful.  You could do this with any of your favorite cakes.  I can see it done with maybe a yellow cake with a beautiful fudge frosting or what about a coconut cake for the holidays?  The only problem that I had with this method is getting it out of the pan without tearing the layers. Only because I did not have large cooling racks.  If you have those then you are good to go.  If you don’t  I’ve  got that one covered for you.   Freeze the cake in the pan after it cools about 10 minutes.   After about an hour or when the cake is good and firm.  Place  a cutting board or a large cookie sheet over the frozen cake and turn it out.  Remove the parchment paper and cut into 4 equal pieces.  Then you are ready to frost it up.

Snicker’s Brownie Cake

Chocolate makes everything better.  This Snicker’s Brownie Cake proves that even on a rainy day there is some sunshine.  I didn’t change a thing about it.  The recipe is perfect as it stands.  It might be the meringue you fold into the chocolate that makes this so heavenly, or the chocolate and butter  melted into one beautiful bowl,  or the 10 Snicker’s  fun bars  you sprinkle on the top .  Any one of these could put this over the top, but together it is a masterpiece to enjoy.  Put this at the top of your list to make during the holidays to impress your chocolate loving friends.  You will not hear the end of it.  It is without a doubt the best brownie I have ever had.

Thai Chicken Soup

Paris we are with you!

The weather is getting cooler so you’re going to  need some new soup recipes to pull out and this one is a winner.  I really mean that it is an A+ guaranteed to knock your socks off recipe!  I had something like this in Carrollton at Highlands Deli and could not stop thinking about then lo and behold Kathy from Noble Pig posted this recipe.  It is to die for.  I have made it at least 5 times and slurped it all up by myself.  Delish!

Mocha Balls

It’s already November and I can’t believe it. Seems as if it was just yesterday that I quit my job of 42 years.  You want to know what I have been doing for the last six months?  Absolutely nothing.  Just basking in the morning, noon, and afternoon quiet.  I’m loving my unstructured time.  Now back to the real reason you are here.  It’s for this chocolate recipe I know.    You really need to make these!  Pronto.  They are very easy. I know you want to make them so get in the kitchen.

Monster Cookies from Paula Deen

Monster Cookies

My niece came to visit last summer and brought cookies along with a sweet baby.  We loved both the cookies and the baby!  Her baby boy is so cute.  I hated to see them leave, but will forever remember the visit as well as my first encounter with Monster Cookies.  These things are dang good!  During the summer I was on a mission to find the recipe and here it is.  Paula Deen’s recipe from one of her cookbooks Paula Deen and Friends.   It is ironic that my niece picked up the cookies from a bakery in Savannah which is the home of Deen.
