It’s spring break for me!   The weather here now is just about perfect, but let’s wait a couple of days and I’m sure that it will change.  You know we are at 32 degrees one day and the next is 75!  Anyway it is so nice to be off for a few days.

Our ALTA tennis season is going strong and this is what I made for the match.  By the way,  my partner Maria and I won!  It was just a gorgeous day to be outside and I will have to say that I enjoyed every minute of the win.  These Lime Squares are a winner,too!  Martha Stewart just amazes me.  I receive her newsletters in my email everyday.  If you have not seen them go here and look at all the gorgeous stuff that she and her staff put together.  I am sure that you will find something to inspire you today.

Chocolate Chip Rum Cake and Pot Lifters

I have the best cake recipe for you today.  It is going to knock your socks off!   Don’t look at me sideways, but it’s made with a cake mix.  Yes, it is true.  I didn’t believe it myself when I tasted it.  I just knew my friend Marilyn was lying, but no she doesn’t lie!    It is like a big  chewy brownie  with a hint of rum,  chocolate chips and nuts.   Now who is not going to love it?  When you take a bite you are going to think that you have died and gone to heaven – chocolate heaven that is.

Hershey’s Chocolate Pudding made in the Microwave !

Chocolate Pudding in the Microwave

I think that I have found the perfect pudding for you!  There will be no more instant pudding nor will there be the yucky pudding that is ready made in those plastic tubs.  This is put together in less than 10 minutes from start to finish.  It is a really rich chocolate pudding that no one will believe  you made in the microwave.

When I posted the recipe on my Promethean board one of my students said, ” Beginner skill?  Mrs. Lupo you know that we are way beyond beginners now!”  That being a true fact we still have only 45 minutes to get the job done.  This recipe was just the perfect fit!  So here are my tips for the pudding after making it twice at home, 4 times for my students, and 24 groups of students making it.  Now yours will be perfect!

Easy Danish Kringle

I  found one of the easiest brunch recipes today.  Your’re going to either hate me or love me.  Especially when we’ve all made our New Year’s resolutions to be more healthy.  It won’t hurt to indulge in just one small piece, though.  The recipe is  from one of my favorite recipe sources Pillsbury. It is a bake-off winner from 1998 and so simple that if will leave you wondering if you have done something wrong.  I just bet that you have all the ingredients right there in your kitchen to get this started at your earliest convenience.  You’ll need a  Pillsbury pie crust, light brown sugar, softened butter, chopped pecans, and powdered sugar.  While to pastry is coming to room temperature you can measure all your ingredients.  In a mere 30 minutes you will have one of the best pastries that you could buy anywhere.

Mini Pumpkin Cheesecakes

I love Thanksgiving.  It is all about family, friends, and food with lots of tradition thrown in.  It’s not as stressful as Christmas.  There’s not a million parties to go to and the stress of finding all the perfect gifts.  I pretty much took Thanksgiving for granted until Jonathan was in high school playing tennis.  He played in Louisville, Kentucky on Thanksgiving Day.  There were not too many places open and the restaurant we chose  was filled with those like us that had no family or friends around.  It was a sad sight and quite depressing. Since then I’m so thankful that I am lucky to have my family and friends to celebrate with.  I hope all of you have a great Thanksgiving with all the ones that you care about.

Coffee Cake

I ask myself, do I really have a part-time job? When I get off at 12 it seems to me that I have worked all day.   I’ve taught 4 classes and have seen 125 students. It is  nonstop for me and time just flies by.    My hours are 8-12, but at 12 it is just like I have another job!  I am busy to the point that I wonder what happens to my free afternoon.  With more time I find myself with less time to just relax!  It seems that I don’t have time to enjoy my front porch with a good book or eat lunch on my deck.  I haven’t plugged in my sewing machine in 2 years!  In the three years that I have had this blog many hours have been spent writing, planning, shopping , cooking, eating, and learning to use a camera.  Thank goodness that I do have a busy life.  What would happen to me without all this stuff to do????  Now for the recipe for this wonderful Coffee Cake that my sister-in-law gave me years ago that has saved my life for many showers, brunches, and for something sweet at 10:00 o’clock at night!

Mini Cheesecakes

Summer as I know it is about to come to an end in five days.  There will be no more breakfast on my front porch.  Sleeping past five AM will be not be a choice.  Reading a good book late at night will come to a screeching halt.  Summer has been fun, but way too short.  School is starting a month earlier than most schools in other parts of the country.  We get lots of breaks, but I so miss the first day of school starting  after Labor Day!   It will be bedtime at 9:30 and the alarm will go off at 4:50!    So Tuesday it is official I will a working girl again!

Fresh Berry Tart

As a food’s teacher I spend a great deal of my time in the grocery store.  At one time in my teaching career I had to do my shopping at Wal-Mart.  I don’t have anything against Wal-Mart, but when you have over $300 worth of groceries to put in the cart, check out, and put away on your own time Wal-Mart is not the place to make the fastest getaway!   Now I do all my shopping for school at Publix.  It’s more costly, but easier for me to get in and out.  They will  open a checkout line just for me and have even brought items to my classroom that were out of stock at the time.  So I love Publix!  They make my life easier.  I also enjoy Publix Apron’s Simple Meals.  They have great ideas for quick meals!  This Fresh Berry Tart was featured last week and is perfect for July the 4th.  There’s no baking just really the easiest dessert you’ve ever made.  When you take a bite you are going to say no way!!!!

Strawberry Buttermilk Sherbet (Ice Cream)

I made my first ice cream of the year this weekend to reduce the number of strawberries that were overflowing in my refrigerator and wouldn’t you know that the temperature would drop to the low 4o’s.  March was a record high 80’s.  What’s up with this ridiculous range of tempts?  But, no matter what the weather is outside the strawberries are coming in like crazy and there are just so many that I can eat before they go bad.  Southern Living came to my rescue with their winning recipe for ice cream, sherbet, or frozen yogurt.  Whatever you want to name it make sure that you put the word scrumptious in front of it.  It is the easiest ice cream you’ll ever make and what is even better is that it is low in calories.  You might want to hide any straws.  The mixture is so good you’ll want to drink it like a milkshake.  It is that good!

Milk Chocolate Pudding

Wow!!!  This milk chocolate pudding is good in so many ways.  15 minutes flat from measuring to refrigerating and you are done!  The short time factor did nothing to compromise the wonderfully rich homemade pudding taste.  It is absolutely out of this world.  And for your sake don’t wait a year and a half as I did before you put this magic potion together.
