Parmesan-Crusted Chicken

Publix and I are best friends.  When you spend hours at the grocery store as I do you have to love the place.  I love their apron simple meals and have used them on this blog and have prepared them for my classes many times with great results.  This Parmesan-Crusted Chicken that I discovered this summer is a keeper.  Anyone that can boil water and turn on the oven has got it made.  Plus the meal is so delicious.  By the way for all of you that are interested school starts for me two weeks from today.  Where has my summer gone?  So I’m digging in and enjoying every last minute.

Blueberry Muffins made with Greek Yogurt

So Yummy!I have fallen in love with Donna Hay’s Magazine.  Thanks to a tweet from Tami who writes a beautiful food blog Running With Tweezers I downloaded a free issue last year.  Oh my goodness is it beautiful!  If you are an Ipad user you should go here and load it now , sit down and indulge yourself with the most beautiful food photography and mouth-watering recipes .  Should you want the magazine in hand just head over to Whole Foods to get a copy or order it to be delivered to your doorstep.  Shop around for a good price on a subscription.  After I downloaded the free issue I am now able to get it for about $20.    I just love it!  I could go on and on, but you get the idea.  It is without a doubt a work of art.  This is the first of her recipes that I have tried and you can bet there will be many more.  This is a muffin from heaven and I didn’t even use fresh summer blueberries as I did here.  I picked up Publix frozen blueberries which turned out to be a fabulous choice.  Donna’s basic muffin recipe will be one that I will be making many more times.  I did make one change though.  She used sour cream and I substituted non-fat plain Greek yogurt.  These are super moist and so flavorful.  I have several in my freezer now ready to pop into the microwave for about 30 seconds.  What a great idea.  I think I’ll have one.  What about you?

Fresh Berry Tart

As a food’s teacher I spend a great deal of my time in the grocery store.  At one time in my teaching career I had to do my shopping at Wal-Mart.  I don’t have anything against Wal-Mart, but when you have over $300 worth of groceries to put in the cart, check out, and put away on your own time Wal-Mart is not the place to make the fastest getaway!   Now I do all my shopping for school at Publix.  It’s more costly, but easier for me to get in and out.  They will  open a checkout line just for me and have even brought items to my classroom that were out of stock at the time.  So I love Publix!  They make my life easier.  I also enjoy Publix Apron’s Simple Meals.  They have great ideas for quick meals!  This Fresh Berry Tart was featured last week and is perfect for July the 4th.  There’s no baking just really the easiest dessert you’ve ever made.  When you take a bite you are going to say no way!!!!

Blackened Tilapia Fillet

I’ve not always shopped at Publix.  In fact here in our suburb of Atlanta we have not always had a Publix.  When vacationing in Daytona Beach , Fla. we  fell in love with Publix.  I cannot say it was because of the pristine clean environment or the wonderful produce,  it was the bakery.  For the record it was their apple turnovers with the sugar on top.  We were in heaven!  We now have a Publix and guess what we stopped buying the turnovers.  Not because they were bad, but we did not want to buy a new wardrobe.    Publix is my friend.  I really like the fact that they give you a new recipe every week that is fast to fix and all the ingredients are right there for you to pick up.  Psychologically they really know what to do that will make you just automatically buy the right stuff!  They time it perfectly.  You go in the store starving!  The aroma of good food just hits you in the face. Then you  buy whatever they want you to buy.  I am just saying that their marketing department should be paid big bucks because they know how to work it.  Some of their recipes are fabulous!  This is one of them.

Creole Shrimp Saute

I am really enjoying my summer.  It started with a beautiful wedding in Louisville, Kentucky and last week a couple of days at the lake with my good friends.  When I came home from the lake GI Joe said, ” Well what did ya’ll do?”  And I said, “Talked and ate a lot of good food.”  Men just don’t get it when women get together that we love to talk.  My husband will get together with some of his buddies and when he comes home I will ask about one of their wives.  And it is always the same. “We don’t talk about stuff like that!”   They just don’t discuss personal or emotional things like women do.  Why is that?  Anyway I am loving my summer.  Getting  a little “me” time before I have to start giving a lot of it to my students again.
