No-Bake Cheesecake

No-Bake cheesecake

This Cheesecake is almost a miracle. From the top to the bottom it’s all no-bake.  It’s so easy that you can whip it up in the morning and serve it for dinner with very little effort.  The traditional cheesecake is delicious, but can be labor intensive and then fooling with that water bath can be intimidating for some of us.  Try this simple no-bake cheesecake and you will be pleasantly surprised with the results.

I really had a lot of fun making this layer cake for my classes.  It is so easy to make and impresses everyone.  They think that I should be some master baker making wedding cakes for royalty!  Yes, that’s what a great recipe can do for you.  It can make you into something that you really aren’t.  This is the best chocolate layer cake ever.  You can do this trust me.

Lime Squares with Pistachio Graham-Cracker Crust

It’s spring break for me!   The weather here now is just about perfect, but let’s wait a couple of days and I’m sure that it will change.  You know we are at 32 degrees one day and the next is 75!  Anyway it is so nice to be off for a few days.

Our ALTA tennis season is going strong and this is what I made for the match.  By the way,  my partner Maria and I won!  It was just a gorgeous day to be outside and I will have to say that I enjoyed every minute of the win.  These Lime Squares are a winner,too!  Martha Stewart just amazes me.  I receive her newsletters in my email everyday.  If you have not seen them go here and look at all the gorgeous stuff that she and her staff put together.  I am sure that you will find something to inspire you today.

Here is just the dessert that you have been looking for.  It is light, easy to make , and delicious.  Any novice cook can put strawberry stacks together with no problem.  With all the juicy strawberries that are starting to roll in there’s no better way to use them. Use your creativity.  Go wild with the way that you cut out the dough, then be adventurous when you plate them.

Apple Dried Cherry Turnovers

When it comes to cooking,  simple is better.  I love Ina Garten’s Back to Basics cookbook that the Athlete gave me for Christmas.  The photos are just gorgeous  and I want to make everything in it!  For the last 5 or 6 weeks I have received bags of apples in my CSA box.  It has been many more apples than I can eat for snacks or in salads so when I saw this recipe I had to try it.  I’m so glad that I did.  I have made these twice and they are well worth the calories!
