Fresh Berry Tart

As a food’s teacher I spend a great deal of my time in the grocery store.  At one time in my teaching career I had to do my shopping at Wal-Mart.  I don’t have anything against Wal-Mart, but when you have over $300 worth of groceries to put in the cart, check out, and put away on your own time Wal-Mart is not the place to make the fastest getaway!   Now I do all my shopping for school at Publix.  It’s more costly, but easier for me to get in and out.  They will  open a checkout line just for me and have even brought items to my classroom that were out of stock at the time.  So I love Publix!  They make my life easier.  I also enjoy Publix Apron’s Simple Meals.  They have great ideas for quick meals!  This Fresh Berry Tart was featured last week and is perfect for July the 4th.  There’s no baking just really the easiest dessert you’ve ever made.  When you take a bite you are going to say no way!!!!

My CSA box has been overflowing with blueberries so it was a perfect way to use them along with yogurt and raspberries.   What a great addition to any menu and I just love the red, white, and blue for the 4th!  It doesn’t hurt that the dessert is  light, healthy, quick, and delicious.  Guess what, my students are going to see this in the fall.  It is a winner!  By the way I’m feeling pretty patriotic today.  We hung a new American flag last night on our front porch.  We’ve never done that before and I really don’t know why especially since GI Joe served for over 25 years in the United States Air Force.  So what are you doing tomorrow to celebrate America’s freedom?

Fresh Berry Tart from Publix Apron’s Simple Meals

Yield 8 servings

Ingredients:

  • 2 (5.3 -oz) nonfat Greek yogurt with honey
  • 3 cups fresh mixed berries ( I used blueberries and raspberries)
  • 1 prepared shortbread pie crust
  • 1 tablespoon powdered sugar

Directions:

  1. Stir yogurt to blend in honey: spread one container of yogurt over pie crust.
  2. Place half berries in a single layer over yogurt.
  3. Repeat layers.
  4. Sprinkle with sugar.
  5. Chill until ready to serve.
