Here is a way to amp up your next salad or soup with these wonderful homemade Parmesan Croutons.  Oh my Gosh!  Crunchy bread seasoned with Parmesan cheese, salt and pepper it’s the best ever.    I could not believe how easy they were and how good the result was.  Next time you are making  a salad try these and see what everyone says.  I can bet it is “wow these are great!”

Caesar Salad

Caesar Salad

Now after last week’s Thanksgiving feast we all need a good salad.   You need it because this salad is fabulous, easy and just what your scales ordered.  Anna introduced this particular Caesar salad to me years ago.  It’s great as a side dish or add your favorite chicken, fish, or grilled steak on top and it is a crowd pleaser.  It was one of my Thanksgiving side dishes this year.  I made homemade croutons that I will share later.  They were great, but forgot to take a picture of them alone.   Now without further ado let’s get it going –  my favorite Caesar Salad from Anna and myself to you!

Paris we are with you!

The weather is getting cooler so you’re going to  need some new soup recipes to pull out and this one is a winner.  I really mean that it is an A+ guaranteed to knock your socks off recipe!  I had something like this in Carrollton at Highlands Deli and could not stop thinking about then lo and behold Kathy from Noble Pig posted this recipe.  It is to die for.  I have made it at least 5 times and slurped it all up by myself.  Delish!

Mocha Balls

It’s already November and I can’t believe it. Seems as if it was just yesterday that I quit my job of 42 years.  You want to know what I have been doing for the last six months?  Absolutely nothing.  Just basking in the morning, noon, and afternoon quiet.  I’m loving my unstructured time.  Now back to the real reason you are here.  It’s for this chocolate recipe I know.    You really need to make these!  Pronto.  They are very easy. I know you want to make them so get in the kitchen.

Monster Cookies from Paula Deen

Monster Cookies

My niece came to visit last summer and brought cookies along with a sweet baby.  We loved both the cookies and the baby!  Her baby boy is so cute.  I hated to see them leave, but will forever remember the visit as well as my first encounter with Monster Cookies.  These things are dang good!  During the summer I was on a mission to find the recipe and here it is.  Paula Deen’s recipe from one of her cookbooks Paula Deen and Friends.   It is ironic that my niece picked up the cookies from a bakery in Savannah which is the home of Deen.

Halloween Peanut Butter and Toffee Candy Bark from Bon Appetit

Who doesn’t love peanut butter and chocolate?  It is one of my favorites from ice cream to candy and when I saw this 5 years ago I saved it.  Yes, I know it’s been a long time coming.  I love this recipe if you even want to call it a recipe.  It’s so easy to throw together.  Just give yourself  time  to chill it either in the refrigerator or if you are in a bigger hurry use the freezer.  To make it a little festive try bagging it in clear bags and tie with some orange and yellow ribbon. Then surprise your friends with a bag of bark.    Keeping two pounds of this at my house is not a good idea , if you know what I mean.  Happy Halloween!

Biscuit Beignets

In the mood for some Beignets, but you can’t swing the trip to New Orleans to Cafe du Monde  in the French Quarter? Here’s the next best thing. These are from one of my favorites from Southern Living made with Pillsbury Buttermilk Biscuits. They are a real treat and super easy. Give yourself 10 minutes and you can be sipping your coffee, eating your beignets and feeling as if are in the center of it all in NOLA.

Parmesan-Crusted Chicken

Publix and I are best friends.  When you spend hours at the grocery store as I do you have to love the place.  I love their apron simple meals and have used them on this blog and have prepared them for my classes many times with great results.  This Parmesan-Crusted Chicken that I discovered this summer is a keeper.  Anyone that can boil water and turn on the oven has got it made.  Plus the meal is so delicious.  By the way for all of you that are interested school starts for me two weeks from today.  Where has my summer gone?  So I’m digging in and enjoying every last minute.

Quesadillas

We all want that quick fix for dinner.  I’ve found that perfect fix.  Quesadillas!!  They are fast, easy, so versatile and above all tasty.  My students made these last week and they had a blast.

The photo is from my second period.  I was so impressed with their work.  I loved their extra effort and their super excitement in class.  And yes they will get extra credit.

Crispy Baked Hot Wings

Oh Yes!  Baked Wings you can make that will knock your socks off.  And they are just in time for your Super Bowl party.  You’ll  be so proud of yourself for pulling this off without all of the calories of frying.  I cannot think of anyone that does not love hot wings, but I’ll be the first to say that I cannot eat them without the guilt.  We now can  because of the recipe that I saw posted from my friend Diana last year during the super bowl from this fabulous blog.  Yes, a year ago.   I’ve made these a dozen times and have enjoyed them immensely.  Today I made them for lunch and finally could take a decent photo. So  here it is for all of you to try.  You’ll never buy them again.
