Quesadillas

We all want that quick fix for dinner.  I’ve found that perfect fix.  Quesadillas!!  They are fast, easy, so versatile and above all tasty.  My students made these last week and they had a blast.

The photo is from my second period.  I was so impressed with their work.  I loved their extra effort and their super excitement in class.  And yes they will get extra credit.

Baked Eggs in Muffin Tins

Ready to top with cheese

My students absolutely loved these!!!!  A couple of my friends told me that I should try this recipe in my class.  It is quick and easy!  Just right for a 45 minute class period.  When I started doing a little investigation about baked eggs lo and behold they are everywhere.  I missed out on this one earlier, but now I am on the bandwagon.  Perfect for a quick breakfast.  My students came up with endless ideas making these the almost perfect food.  That is what eggs are anyway – the almost perfect food!  So now go get your muffin tin buttered and cook up some eggs for breakfast.  Store in the refrigerator for up to 5 days (if they last that long) and pop in the microwave for about 30 seconds.  Eggs are a great protein source that will keep you satisfied all morning.

One Skillet Cheesy Beef and Macaroni

This recipe is nothing fancy, but it will be one that your family will ask for time and time again.  You know the one that makes your husband smile when he finds out what’s for dinner or when half your son’s baseball team shows up at your house and they are all starving!   It’s quick, easy, and above all cheesy good!  Again, I am loving Katie Workman’s Cookbook The Mom 100 Cookbook.  This is one of Katie’s recipes that I have made many times.  It is so good and it will be a favorite of yours once you put it on your dinner table.

Bacon Tomato Cups

Don’t hate me for this recipe that you are going to love!  It’s fantastic, easy, but not healthy.  Invite at least 18 of your friends over when you decide to make it that way everyone gets two and you have no guilt.  Or just have them as a main dish with a big salad.  Anyway, you’ll  have to balance out the calories  some way to keep it all away from your hips if you know what I mean.

Here’s how I got the recipe.  After Easter, Madison in my fourth period class told me that his mother had made the best biscuits with Rotel tomatoes and that was all it took.  I had to have the recipe.  It is really good and you can change it up for whatever meat that you might have.  I think that Canadian Bacon, ham, sausage, and even chicken would work perfectly.
