Here is a way to amp up your next salad or soup with these wonderful homemade Parmesan Croutons. Oh my Gosh! Crunchy bread seasoned with Parmesan cheese, salt and pepper it’s the best ever. I could not believe how easy they were and how good the result was. Next time you are making a salad try these and see what everyone says. I can bet it is “wow these are great!”

Caesar Salad
Now after last week’s Thanksgiving feast we all need a good salad. You need it because this salad is fabulous, easy and just what your scales ordered. Anna introduced this particular Caesar salad to me years ago. It’s great as a side dish or add your favorite chicken, fish, or grilled steak on top and it is a crowd pleaser. It was one of my Thanksgiving side dishes this year. I made homemade croutons that I will share later. They were great, but forgot to take a picture of them alone. Now without further ado let’s get it going – my favorite Caesar Salad from Anna and myself to you!

Bacon Thingeys
Bacon makes everything good! When these things were the rage in the eighties I was busy changing diapers and then after that it was a whole calendar of children’s events. You know soccer, tennis, scouts, birthday parties, and homework. I don’t think that I went to a single adult party during that time. So therefore, I missed these fantastic Bacon Thingeys that Ree raved about and then Paula. If you google these everyone in the world it seems has had these except me until Jane R. brought them to a pool party last June. Let me tell you that they literally flew out of the basket. I could not for the life of me figure out what they were. I just knew they were good. I was blown away when I learned it was simply a saltine wrapped in bacon with a little cheese and baked. Easy! If you haven’t tried these you should try them immediately. They will be perfect for the upcoming holiday parties.
Smoked Gouda Macaroni and Cheese
I love macaroni and cheese prepared just about anyway except the stuff that comes in a box. I’m talking the real deal with a homemade sauce. I found one that is different, but it a good way. It’s packed with lots of nutrients and lower in calories than your regular Mac and Cheese. I love the flavor that the smoked Gouda cheese gives this dish. It’s almost like you put lots and lots of smoked bacon with none of the calories. Yes, Bacon! The spinach is a great addition and is so good with the rich and creamy cheese sauce. You should try this especially with all the fresh spinach that is available now.

Parmesan Pan Baked Potatoes
This is the perfect side dish. Not just because it is delicious, but it is lightning fast to prepare, low-calorie and a good recipe to engage some help from everyone in the family. Four medium potatoes requires only 2 tablespoons of butter and with the addition of either parmesan or Italian bread crumbs they pack a lot of flavor. This recipe has been a standby at home as well as in my classroom and is enjoyed by everyone. There is a trick to making them that many of my students don’t get the first time. Cooking times can vary wildly! All medium potatoes are not created equal so the cooking times can be very different. An overcooked potato is not a pretty site!
