Sock-It-To-Me-Cake

This recipe is a blast from the past!  It is the Duncan Hines Sock It to Me Cake.  What a name for a cake!  If you are into music or not you probably  know  this line from Aretha Franklin’s song RESPECT.  It was released in 1967.  Then in the 70’s Laugh In used it as a catch phrase in their show.   No matter how the cake got its name it’s really good.  I’m not a big fan of  cake mixes, but this one is worth the time.  It is super easy and really good.

How to Make a Heart Cake for Your Valentine

Teenagers love Valentine’s Day!  It’s not just about boyfriends and girlfriends.  They want to share the day with their friends and families and sometimes their teachers.  School was really buzzing today with candy, flowers, cards, stuffed animals, cake, cookies,  and balloons.  There was some buzz around my room, too.  Word got out that I was decorating Valentine Cakes for my classes and  you would have thought I was giving away one hundred-dollar bills.   It was only cake and not even one made from scratch!

Top 10 Post of 2011

Hope that all of you had a great Christmas and a Happy New Year!  I’m not going to bore you with my resolutions that are probably the same as everyone elses.  You know get yourself organized, eat healthier, and exercise more frequently.  I just want to enjoy life.  It is as simple as that!  With that said here are the top 10 posts of this year.  Several of them had the help of Stumble Upon by some of my blogger friends Dine and Dish and A Cook and Her Books.  Thanks to all of you that read my blog.  I really appreciate it!  I still have many things to get done that you have asked for, so don’t think that I have forgotten.  I havent.  The printer friendly recipe is being worked on now.  I do feel good about the recipe index.  It was needed and took a long time for me to finally sit down and do it. So here’s to another year gone by and new one to do with what we would like.  Let’s make it a good one.  Any day will be good with any of the following recipes.

Chocolate Mayonnaise Cake

I have turned up my nose at this cake for years.  Who in their right mind would bake a perfectly good chocolate cake with mayonnaise?  Mayonnaise goes on a great hamburger,  in Southern pimento cheese  or in your best chicken salad, but a cake no way!   After making Mayonnaise Rolls for my students I had a lot of mayo left over and decided after being bombarded with the advertisment for this cake that I would actually try it.  Tell me that ads don’t have power over the mind because that’s the only reason I tried the recipe.  Who can resist the way the cake looks in the ad just so mouthwatering and  moist!  So here is the lowdown on the mayonnaise cake.

Cake Doughnuts made with Buttermilk

This was my first attempt at making doughnuts and I am not kidding when I tell you that after making these 5 times in a row that I thought of the episode of “I Love Lucy”  that is shown all the time.  You know the one where she is working in the candy factory filling boxes.  The candy starts coming out too fast and she stuffs her pockets, then puts candy down her shirt and  tries to put as much as she can in her mouth.  That was me making doughnuts in a forty minute class back to back four times.

Pralines and Cream Ice Cream

I’m in love with my Kitchenaid ice cream attachment!  It is so easy to make the best homemade ice cream and just the right amount.  GI Joe’s all time favorite ice cream is pralines and cream.  This is so decadent and so good.  I made homemade New Orleans style pralines to crumble in the rich ice cream and swirled homemade caramel sauce to add even more richness.  You can’t help but love this stuff, but make sure that you have some company with you when you pull it out of  the freezer or you’ll be tempted to eat it with a spoon right out of the carton.  There will be no stopping you.  Then like me you’ll be spending some extra time at the gym.

Crescent Rolls filled with Chocolate

Pain Au Chocolat is one of my favorite things to eat.  Melted chocolate in a buttery croissant is just plain sinful.   I love them calories and all.  I don’t make them from scratch and it’s not often that I get them from a French bakery.     Here is a great substitute that you can make in less than thirty minutes.  It’s not the same rich, flaky, and buttery croissant as you might find in a French bakery, but it is a close second.  You will get no complaints when these pop out of the oven!

Butter Pecan Ice Cream

I chose this ice cream to make for my reading club.  It was a big hit!   There is just something about Butter Pecan Ice Cream that make it great.    I think it is the rich flavor of the toasted pecans that are then mixed with butter and salt.  Or it could be the brown sugar and heavy cream.   I had to make it twice because a lot of it got eaten before my meeting.  I’m not saying who ate it, but it was eaten quickly!  Writing  that it is very good would be an understatement.  It is so rich and creamy and the toasted pecans,  good gracious who doesn’t love them?    It does have a few steps, but it is well worth it.  I will say it is easier than my other favorite chocolate that I absolutely love.  One bit of advice though,  make sure that you have some good quality pecans.  They are not in season until November so anything that you buy now is last year’s crop.   The ones  you buy from the grocery store are probably not going to be the best quality.    Buy from a reputable dealer that stores their pecans frozen.  They will last indefinitely. Clean them from any of the debris between the meaty part of the nut.  It is bitter and even a small bit can ruin a good recipe.

Brown Sugar Poundcake

This is my new go to cake when I’m asked to bring dessert.  It’s delicious!  I’ll have to admit it has been driving me crazy for about a month.  Wanting to get it just right before posting has been a little difficult.  Just the icing though.  The cake well, it was a cake walk!  I’ve made it three times now I think it’s  time to show it to the world.  Even before tasting it I knew that the icing would be the winner in so many ways.  Praline or caramel lovers will fall in love with this cake.  It’s got that old-fashioned icing that my grandmother put with a plain yellow cake.  You know the kind that just melts in your mouth with that rich buttery taste.
