Sauteed Corn

School is now is session!  Three days mimicked ten days.  Schedule changes, reading the handbook, going over rules and regulations made for boredom.  I did treat my classes Friday with these Fudgy Rocky Road Bars.  They got rave reviews and some of my new students tried them out on their families and friends this weekend.  That’s success!  I will keep you posted about my classes, but so far so good.

Last night I tried this side dish that I have had bookmarked all summer from Katie Workman The M0m 100 Cookbook.  It’s a great way to use the fresh corn that is so plentiful now.  The dish is packed with flavor.  I’m talking bacon, red pepper, shallots, spinach and corn.  It will be a great addition to any entre, but you know what I think it would be perfect to stand alone.  Just eat the whole bowlful with nothing else.  Heaven.

Sky-High Brunch Bake

Talk about a show stopper this Sky-High Brunch Bake is one that will stop you in your tracks!  I could not resist making it when I saw the picture in Food and Family by Kraft.  It is beautiful to look at and it is quite tasty.  I am keeping this bookmarked to use during the holiday season for a brunch because the green spinach and red peppers are so colorful!  Don’t let the beautiful picture intimidate you because it is super simple to make if you can get past rolling out the pastry dough.  Just follow the thawing directions on the box.  You can thaw it overnight in the refrigerator or leave it out for about 45 minutes ahead of time.  I like to thaw it out in the refrigerator.  If you let it get too warm just put it back in the refrigerator for a few minutes.  The pastry dough is very forgiving.  The rest of the recipe is a cinch to make.  Trust me by saying the novice cook can pull this off without a hitch and come out smelling like a rose!

Smoked Gouda Macaroni and Cheese

I love macaroni and cheese prepared just about anyway except the stuff that comes in a box. I’m talking the real deal with a homemade sauce. I found one that is different, but it a good way. It’s packed with lots of nutrients and lower in calories than your regular Mac and Cheese. I love the flavor that the smoked Gouda cheese gives this dish. It’s almost like you put lots and lots of smoked bacon with none of the calories. Yes, Bacon! The spinach is a great addition and is so good with the rich and creamy cheese sauce. You should try this especially with all the fresh spinach that is available now.

Angel Hair Pasta with Spinach, Shrimp, Tomatoes and Basil

I love this dish!  Oh My!  It has a lot of flavor.  It is very quick to make!  What else do you want?  Someone to make it for you?   This recipe is a cinch .  You will be in and out of the kitchen in no time.  The compliments will come flying your way and you will be wondering what happened.  It is just so easy to make this dish and it is amazing that it just has flavors that you would not imagine.  I was totally shocked.

Rice Pilaf with Spinach and Bacon

Spinach, spinach everywhere!  I have loved the beautiful spinach I am getting in my CSA box each week.  It has been some of the best  that I have ever had, but I cannot prepare this every week.  I have to branch out and try something new,even though sitting down with a bowl of this would be quite rewarding. What did I come up with?  It had to be something quick and a dish that could use some of my other CSA goodies, a gorgeous oyster mushroom and an onion.  Anna’s rice pilaf recipe came to mind.  It’s not her original recipe.  I will share it at a another time.  It is quite delicious.  I used it as a side dish, but it could very well work as a main dish.  I have been known to add a little soy sauce and eat a plateful.

Boursin Spinach Gratin

I just had to cook this spinach recipe when I first saw it on Kate in the Kitchen’s Blog. When I made it the first time I was talking to a friend about it and she said “Wanda, you have taken a very healthy food and made it not so healthy!”  I don’t look at it that way.  I just made it delicious.  You don’t have to eat all of it. But  I could eat it in its entirety. It is so creamy rich and flavorful. The spinach with the richness of the Boursin cheese and the crunchy panko bread crumbs.  Nothing could be better. You have to try this.  It is heavenly.

Sausage, spinach and provolone pizza

Here at our house pizza is a favorite.  I love pizza, but only if it is made at home.  Ordering pizza out is way too expensive, laden with lots of calories and just plain not good to me.  Now there  is one place  I would go for pizza and for the life of me I cannot remember the name of the restaurant in Asheville, North Carolina. It  has the best pizza and greek salad.  If you know the one I am trying to think of let me know and I will link to them.  When we were there the line was way out the door, but worth the wait. 

I have been making pizza since high school.  My favorite was a pizza made in an electric skillet with a  biscuit dough crust. It was a treat! Now I will make pizza dough in the food processor, bread machine, mixer or use refrigerated or frozen dough that I pick up at the store. 

Making your own dough is very easy.  You just measure and let the machine do the work.  But, that will have to be another post.  It is way too much information for now!
