For the past three weeks I have received these beautiful frozen blueberries in my CSA box. They have been sitting in my freezer calling out to be included in some recipe. Now these are not blueberries that you will find in the frozen section of the grocery now or fresh ones that you might find shipped to us from across the sea. These are gargantuan blueberries from this past summer right here in my area of Georgia. We are talking beautiful blueberries, so these muffins were just perfect for them. They will be great to take to work or eat on the way to the gym before working out. And they are fabulous because I just have eaten one. WOW! Continue reading

Kale and Potato Soup
Ten years ago I didn’t know what kale was. And for sure had never eaten it. Having fresh vegetables delivered weekly has opened up a whole new chapter in my food life. If you can you should subscribe to a CSA in your area for more reasons than just eating fresh vegetables that are good for you. I have been on the receiving end of these great deliveries for four years and I can tell you that I have prepared foods that would have never entered my kitchen. It has been a wonderful experience. I love the fact that I am supporting the local farmers in our area, but I am amazed at how much I have learned about produce and how to prepare it. I am proud to be a part of farm to table. Sweet Potato Casserole
Okay, don’t judge me on this. I am not a fan of sweet potato casserole or souffle. I am a lover of just plain sweet potatoes with butter and salt. I just don’t like side dishes on the sweet side. Sweet to me belongs in the dessert category. You ask why did I make this sweet potato casserole? Well, when bringing a dish for a get together and you ask, “What can I bring?” Sweet Potato casserole was the answer. So I am making sweet potato casserole.

Boursin Spinach Gratin
I just had to cook this spinach recipe when I first saw it on Kate in the Kitchen’s Blog. When I made it the first time I was talking to a friend about it and she said “Wanda, you have taken a very healthy food and made it not so healthy!” I don’t look at it that way. I just made it delicious. You don’t have to eat all of it. But I could eat it in its entirety. It is so creamy rich and flavorful. The spinach with the richness of the Boursin cheese and the crunchy panko bread crumbs. Nothing could be better. You have to try this. It is heavenly.
