Sky-High Brunch Bake

Talk about a show stopper this Sky-High Brunch Bake is one that will stop you in your tracks!  I could not resist making it when I saw the picture in Food and Family by Kraft.  It is beautiful to look at and it is quite tasty.  I am keeping this bookmarked to use during the holiday season for a brunch because the green spinach and red peppers are so colorful!  Don’t let the beautiful picture intimidate you because it is super simple to make if you can get past rolling out the pastry dough.  Just follow the thawing directions on the box.  You can thaw it overnight in the refrigerator or leave it out for about 45 minutes ahead of time.  I like to thaw it out in the refrigerator.  If you let it get too warm just put it back in the refrigerator for a few minutes.  The pastry dough is very forgiving.  The rest of the recipe is a cinch to make.  Trust me by saying the novice cook can pull this off without a hitch and come out smelling like a rose!

Caramel-Pecan Brownies

Brownies are the easiest cookie to make, but they are also the easiest to wreck.  It is very hard to judge doneness so many cooks including myself *ahem* will overcook them.  Most of the recipes will be done when they start to pull away from the sides of the pan.  This recipe has a gooey caramel center so it is harder to judge doneness.  Just watch carefully and be ready to pull these out.  When I read the recipe and saw that you cooked one layer for 25 minutes, added caramel and more brownie mix and cooked for an additional 30 minutes I said no way!  The recipe fooled me.  It is a fantastic moist and chocolatey brownie.  One of the best I have ever had.  Try these and you will never make brownies from a box again and you may even throw your old recipe away.  They won the taste test with about 42 of my best tasters!

Pumpkin-Chai Cheesecake

The first time that I had pumpkin cheesecake was on the deck of AJ’s on Tybee Island. We were there for GI Joe’s weekend getaway with the National Guard.  One of our most favorite places to eat is AJ’s.  The food there is fabulous and the sunset is the most beautiful you would ever experience.  And to top it off  the cheesecake was heavenly.   I was so disappointed when returning in December of that year that the chef that prepared the cheesecake had left and it was no longer available.  It was a sad night.
