The Easiest Fried Rice EVER!

Easy Fried RiceIf you are in a big hurry to cook up something that is really tasty, I bet you have all of these ingredients  in your kitchen! My classes are making this dish and it is the biggest hit. I’m always amazed at the simplest of dishes that can make you happy. This is one of them, so get ready for some big smiles coming your way.

If you are like me sometimes you think that more is better when it come to a recipe. But I am learning that really simplicity is the winner. When I was thinking through what to prepare for the rest of the year back in January this dish came to mind. It was a winner with last year’s crowd , but  it was more time-consuming for a forty-five minute class.  So  I threw out something super simple and am pleasantly surprised at the results.

Macaroni and Cheese from Martha

Perfect Mac & Cheese

Let me just say that if you only make one mac and cheese in your lifetime this should be the one.  My gosh!  I just had to make it after reading all the comments after this was written.  What about Food 52?  They shouted from the rooftop about it, too.  So I’m right up there with the rest of them and I have to say that it is the best macaroni and cheese that I have had.  Martha knows her mac and cheese that’s for sure.  It has just the right amount of bechamel  sauce to go with the pasta and I love the White Cheddar and Gruyère Cheese.  I will have to admit skepticism about the nutmeg, but it went in the sauce .  Perfection!  So it’s your turn to let Martha’s Perfect Macaroni and Cheese be the hit at your house.  It was at mine.

Greek Chicken and Barley Salad

Greek Chicken and Barley Salad

Chicken salad and Greek salad are two of my favorites.  I knew I had a winner when I saw this recipe on my Cooking Light calendar.  I was not sure if everyone in my house would love it, but to my surprise everyone did.  So here you are a quick, easy, flavorful, and healthy salad that your family will enjoy.  Don’t be leery of the barley if you have never used it before.  It is so similar to pasta  or rice in texture.  Barley is also an excellent source of soluble fiber that is good for digestion and a great source of potassium which helps to lower blood pressure.  Hope that all of you are enjoying your week.  I’m off this week for a winter break.  While some of my friends are enjoying Disney World, I’m just enjoying Villa Rica!

Meatloaf Muffins

One of my favorite comfort foods is meatloaf and mashed potatoes.  Several meatloaf recipes have made it to this blog and all of them have been good in their own way, but now this one is my favorite.  There is really no special ingredients that are added, but I  think that sauteing the peppers, onion , and garlic makes a big difference in the flavor.  This was not my bright idea although I would love to take credit.  Emeril Lagasse’s recipe for meatloaf kept coming up at the top of my Best Meatloaf search and while his recipe is much more complicated than this simple one he did saute the vegetables first.  So I thought I would give it a try and guess what it works great!  The idea for these Meatloaf Muffins came from Better Homes and Garden’s Make and Take magazine.  I think it is a great idea if you have small children or you do want to take this to a pot luck dinner.  But, I found them to be more time consuming than just the standard free formed meatloaf cooked on a baking sheet lined with parchment paper.  Although the muffins might take a shorter time to cook I found that placing them in the muffin pans took longer to prepare.     This recipe made it to my table three times last month and even the leftovers are grand! Pork Ramen Soup

I made this soup two days in a row.  One day I had it for breakfast, lunch, and dinner.  It is that good!  I love Real Simple recipes and this one is a big hit!  Don’t change one thing until you make it at least once then you can substitute tofu, chicken, or shrimp for the pork.  I love it!  The ingredients are fresh and full of flavor.  The fresh ginger is unbelievable!  Once you and your family discover this fresh flavored dish  you will go back to it again and again.  It is one of the best soups that I have ever had!

Creamy Shrimp Alfredo

I love a good pasta dish.  Usually they are quick to make and you can add whatever you have on hand to make them your own dish.  That is exactly what I did with this dish that my Tennessee friend told me about.  Her family loved it so I knew that we would , too.  I was right.  It was a big hit.  I am not a lover of alfredo sauce.  It’s just too heavy for me.  I’m more the fresh tomato sauce person or pesto sauce.   I liked the dish the first night I served it, but  what I did with the leftovers the next night I loved!

Spinach and Cheese Quesadillas

This is what my classes did for their last lab.  Simple, quick, and somewhat healthy.  I was pleasantly surprised at the number of students who really loved spinach.  Spinach is one of the mega foods that is packed with nutrients.  A plate of spinach might not be so appealing, but put it in a tortilla with cheese and it will win hearts every time!
