The Easiest Fried Rice EVER!

Easy Fried RiceIf you are in a big hurry to cook up something that is really tasty, I bet you have all of these ingredients  in your kitchen! My classes are making this dish and it is the biggest hit. I’m always amazed at the simplest of dishes that can make you happy. This is one of them, so get ready for some big smiles coming your way.

If you are like me sometimes you think that more is better when it come to a recipe. But I am learning that really simplicity is the winner. When I was thinking through what to prepare for the rest of the year back in January this dish came to mind. It was a winner with last year’s crowd , but  it was more time-consuming for a forty-five minute class.  So  I threw out something super simple and am pleasantly surprised at the results.

Blue Cheese Dressing

After doing as little shopping one of my favorite places to have lunch is Prime at Lenox Square.  I just love their Cobb Salad with blue cheese dressing.  I am happy to say that I have found the recipe so now all of us can enjoy it at home.  It packs a lot of flavor and you’ll find you only need a small amount so guess what – a reduction in the amount of calories.  I can go for that!  I just put together a chopped salad  including chopped romaine, cucumbers, grape tomatoes, and hearts of palm.  I placed all the vegetables in a container with a top and added about a heaping teaspoon of dressing.  I put the top on it and gave it a good shake.  Oh my Gosh!  So help yourself to the greatest salad dressing and it is just a shame that it is so easy to make.

Tami’s Everything Salad

You know that I love salads and this is one great salad that you will love, too!  When my tennis friend Tami told me that she made this salad every Thanksgiving and it was devoured I stepped back a minute and thought.  You know a salad really has to be good to be eaten at Thanksgiving  because there is so much good food on a Thanksgiving table.  Usually a salad will be the last food eaten, but this is the exception.  I promise you it is like dessert that’s a salad, but so good for you!  Tami served it last week at our end of the year tennis get together and it was a hit!  I made it last night for my book club and there was just a morsel left.  It is a fantastic salad and everyone will love it.  It has it all veggies, fruit, nuts, and cheese that are so good for you.  Then a heavenly sweet and sour dressing that is to die for.

Pork Ramen Soup

I made this soup two days in a row.  One day I had it for breakfast, lunch, and dinner.  It is that good!  I love Real Simple recipes and this one is a big hit!  Don’t change one thing until you make it at least once then you can substitute tofu, chicken, or shrimp for the pork.  I love it!  The ingredients are fresh and full of flavor.  The fresh ginger is unbelievable!  Once you and your family discover this fresh flavored dish  you will go back to it again and again.  It is one of the best soups that I have ever had!

Spinach and Cheese Quesadillas

This is what my classes did for their last lab.  Simple, quick, and somewhat healthy.  I was pleasantly surprised at the number of students who really loved spinach.  Spinach is one of the mega foods that is packed with nutrients.  A plate of spinach might not be so appealing, but put it in a tortilla with cheese and it will win hearts every time!

Arugula Salad with Beets and Goat Cheese

I am a big lover of all kinds salads.  When I go out to eat I am extremely adventurous, but at home not so.  I’m ready to change all that.  The main reason is boredom, but right now with fall greens that are filling my CSA box I need to venture out more.  Last week a large bag of arugula appeared.  After doing a little research on the web I found two great salads.
