This is what my classes did for their last lab. Simple, quick, and somewhat healthy. I was pleasantly surprised at the number of students who really loved spinach. Spinach is one of the mega foods that is packed with nutrients. A plate of spinach might not be so appealing, but put it in a tortilla with cheese and it will win hearts every time!
Here’s how we put them together.
Spinach and Cheese Quesadillas
Yield: 6 servings
Ingredients:
- Bag of spinach
- 8 oz. Monterey Jack cheese, shredded
- 1/4 cup olive oil, divided
- 6 flour tortillas
Directions:
- Heat large skillet to medium high heat.
- Add about 2 tablespoons olive oil and quickly add spinach.
- Stir just until wilted. Set aside.
- Using an electric skillet preheat to 325 degrees.
- If using a large skillet, heat to medium heat.
- Brush tortillas with olive oil placing in hot skillet.
- Place a couple of tablespoons of sautéed spinach and couple of tablespoon of cheese on tortilla .(Some of my students added cooked chicken)
- Fold tortilla in half.
- Brown on both sides or until cheese is melted.
- Serve with your favorite toppings such as jalapenoes, sour cream, or salsa.

For the spinach and cheese quesadillas i learned that you can oil a side of the shell to make it cook easier and taste better.
i learned that its easier to precook the spinich before you actually put your quesedilla together
it was very good i do not like spinach and it was really good
I didnt really care for quesadillas until we made it in class and it was really tasty! its also super easy to make.

I was taught that you use olive oil to cook spinach.
I didn’t know if I would like spinach in quesidillas, but after cooking this, I found out that widening my taste and likes for foods, i’ll find more foods that I like.

I would have never thought of using spinach in a quesadilla! I learned that you should sautee the spinach before putting it in the tortilla.
This was an extremely easy and delicious meal. Next time I will add some grilled chicken in the quesadillas to add more flavors.
I learned that a lot of spinach actually tastes good! i was skeptical when i saw the huge bag of spinach but it was delicious!

be carefull not to burn the cheese or it would be horrible. but i learned that spinich shrinks up after being cooked.

Spinach and cheese quesidillas had a decent taste, but i did like the fact they contained spinach which was a nice texture.

I learned through doing this lab that its actually better to use a montery jack cheese in the quesadilla’s instead of a cheddar cheese because it’ less oily.
