Cake Doughnuts made with Buttermilk

This was my first attempt at making doughnuts and I am not kidding when I tell you that after making these 5 times in a row that I thought of the episode of “I Love Lucy”  that is shown all the time.  You know the one where she is working in the candy factory filling boxes.  The candy starts coming out too fast and she stuffs her pockets, then puts candy down her shirt and  tries to put as much as she can in her mouth.  That was me making doughnuts in a forty minute class back to back four times.

Butter Pecan Ice Cream

I chose this ice cream to make for my reading club.  It was a big hit!   There is just something about Butter Pecan Ice Cream that make it great.    I think it is the rich flavor of the toasted pecans that are then mixed with butter and salt.  Or it could be the brown sugar and heavy cream.   I had to make it twice because a lot of it got eaten before my meeting.  I’m not saying who ate it, but it was eaten quickly!  Writing  that it is very good would be an understatement.  It is so rich and creamy and the toasted pecans,  good gracious who doesn’t love them?    It does have a few steps, but it is well worth it.  I will say it is easier than my other favorite chocolate that I absolutely love.  One bit of advice though,  make sure that you have some good quality pecans.  They are not in season until November so anything that you buy now is last year’s crop.   The ones  you buy from the grocery store are probably not going to be the best quality.    Buy from a reputable dealer that stores their pecans frozen.  They will last indefinitely. Clean them from any of the debris between the meaty part of the nut.  It is bitter and even a small bit can ruin a good recipe.

Banana Pudding Pie

Everyone that I know loves the Original Banana Pudding recipe that’s posted on the side of most Nabisco vanilla wafer boxes and that’s the one that I usually make.  It is the one that I used in my classroom for our last lab of the year, but with a deterrents thrown our way I was not sure that we could pull it off.  With a fire drill and advisement making the class almost too short to have anything but a glass of milk with vanilla wafers and sliced bananas I had to come up with something or just ditch the lab altogether.  At the last-minute I decided to try speeding up the custard by using the microwave.  It worked perfectly for me —TWICE!  Seven minutes is all it took and that really beats standing over a double boiler for about thirty minutes.  Which meant that my classes could get their Banana Pudding in the oven in less than an hour and still have time to enjoy it in the classroom.

Apple Dried Cherry Turnovers

When it comes to cooking,  simple is better.  I love Ina Garten’s Back to Basics cookbook that the Athlete gave me for Christmas.  The photos are just gorgeous  and I want to make everything in it!  For the last 5 or 6 weeks I have received bags of apples in my CSA box.  It has been many more apples than I can eat for snacks or in salads so when I saw this recipe I had to try it.  I’m so glad that I did.  I have made these twice and they are well worth the calories!

German Chocolate Cake

This is one of my favorite cakes to make during the holidays.  It brings with it lots of memories.     My dad loved it.  Now I ‘m not one of those sweet lovers, even though I do love to bake.  But, I have been known to cut myself a huge piece of this German Chocolate Cake and love every moment of indulgence. There is nothing like it.  The coconut pecan frosting and filling is heavenly by itself, but with the sweet German chocolate layers it is completely sinful!   Putting this recipe together takes a  little more time especially when the baker (being me)  seizes the chocolate and then has to make a run to the grocery, which is a fifteen minute trek one way.

Pumpkin-Chai Cheesecake

The first time that I had pumpkin cheesecake was on the deck of AJ’s on Tybee Island. We were there for GI Joe’s weekend getaway with the National Guard.  One of our most favorite places to eat is AJ’s.  The food there is fabulous and the sunset is the most beautiful you would ever experience.  And to top it off  the cheesecake was heavenly.   I was so disappointed when returning in December of that year that the chef that prepared the cheesecake had left and it was no longer available.  It was a sad night.

Frozen Creams with Strawberries

 

After making this I had some heavy cream  just sitting in my  refrigerator calling out to me every time I opened the door. Frozen creams are one of my favorites.  I love this dessert. Whipped cream and strawberries are the perfect match in so many ways. It is rich, creamy, decadent and yet so simple.   It is the perfect dessert for any meal.   Now with the temperature heating up this frozen delight will hit the spot.  And you could not ask for anything so easy.  If you can whip cream you can make this. 

It is also versatile with endless toppings.  You could use most any fruit that you have available.  Blueberries would be a great choice or fresh apricots with toasted almonds. My mouth waters just thinking about cranberries with oranges, sugar and  toasted pecans.  And more decadence could be orange marmalade with shaved chocolate.  My gracious the list could go on and on.  Create your own special piece of heaven.

First of all let me say that this is a very easy chocolate pie and the filling comes together really quickly.   I chose not to make a homemade crust and it was very delicious.  But something went very wrong and you should know about it so that it will not happen to you!

Hummingbird Cake

The first time I encountered this wonderful cake was on a romantic dinner with GI Joe!!!  He took me to Dailey’s for dinner before a show at the Fox.  The night was what can I say other than just plain great!  Sorry to say that Dailey’s closed this year so we can no longer experience their wonderful desserts.  But we can treat ourselves to the delicious cake that they served.   After that night we took the Athlete there before seeing the Christmas Carol and to this day it is his favorite dessert!  So here is a family favorite for many reasons.  I hope that you can enjoy as much as we have.

This is not your normal cake where you cream butter and sugar and then add flour alternately with liquid.  It is made by the muffin method of mixing.  In other words it is just plain easy!!!

Baby Pecan Pies or Pecan Tassies

Pecan pie is GI Joe’s favorite dessert.  No that is incorrect!  Any dessert is GI Joe’s favorite dessert.  Before I could get these little babies cooled good, he had popped two of them in his mouth as we were about to eat dinner.  Dessert before dinner can be a good thing!
