I am really a snob when it comes to pizza. I like great pizza. Right now I am on a mission to make the best pizza. The total package has not come together yet, but I think that I have found part of the eluding pizza – the sauce. Back in July GI Joe took me the New York City for my birthday. This Tuesday Winston Jones from the Douglasville Sentinel which is our local newspaper came to my second block class just to spend a little time and find out exactly what goes on in Nutrition and Wellness. It just so happened to be the first episode of a short unit on cookies. My students were excited about making cookies and were very attentive. Winston took several pictures and lots of notes. He left loaded down with cookies and me wondering what kind of impression I made.

Every once in a while I must have a down home country-style meal. You know what I mean. Meat with lots of vegetables plus bread, preferably biscuits. I don’t cook this type of meal often, but it is the type of meal that reminds me of my grandmother. She always had this meal ready on any given day. That’s not going to happen in my house for many reasons. What’s a girl to do that religiously eats a salad for lunch to get a fat fix? The meal I prepared with these pork cutlets is one great way to get the fix! Some of you are thinking that this nutrition teacher has gone off the deep end. Not quite, this is my reward for the many visits to the gym and eating in moderation.

Cinnamon rolls cooking in the oven are just plain good. The cinnamon and sugar melting together sends out an aroma that turns up the senses a notch and makes the mouth water. But, if you’re like me and short on time cinnamon rolls made with yeast dough are not always an option.
Here is an alternative to the timely recipe that you can throw together in a matter of minutes. They are delicious, too.

Before attempting our second lab making biscuits from scratch I spent two days demonstrating . One class period I made these Cheese Garlic Drop Biscuits. They were a hit, but the Cuisinart food processor was a bigger hit. Many of them had never seen one used and they were fasinated by it. I love my Cuisinart that I have had for at least 25 years. I have only had to replace the bowl top for $20 otherwise it has been worth the money. I talked quite a bit about shopping for food processors. By the way, buy one that will last. If you get a really good one it will probably outlast you. The cheaper brands have a smaller motor and will eventually burn up and have to be replaced. I made these lemon bars to take to my first tennis match of the season. It was my first time making them and I don’t really know why I have not made them before now. I take that back I do know why. I like them too much! To me there is nothing better than a sweet and tart dessert. I love lemon meringue pie and lemon cake. Now I have another favorite. It is easy to put together. The bars have just two layers, but you don’t have to let the first layer cool before pouring in the lemon layer. After baking you’ll have to let them cool for about two hours before cutting them. I personally think that every good cook should be able to put good homemade biscuits on the table. Now that I have said that let me say this. I don’t think that biscuits are very healthy. In fact they’re not very healthy at all, but man they are good! Every so often you just have to have one or maybe two. Last winter I made these buttermilk biscuits that were divine and in the fall I made these that are my old standby. Well, I took my old standby and changed it up a bit. These little bites of buttery goodness are easy to put together and good enough to serve at a dinner party. Don’t confuse them with the butter muffins made with butter and sour cream.

While I am sitting here writing this post I can see the changing of the seasons. I know it is still hot, but the trees behind our house are beginning to turn from a crisp green to a golden-yellow. I love this part of the year, but I do hate to leave behind all the wonderful produce that the summer brings such as fresh sweet corn, squash, eggplant, watermelon, and two of my favorites okra and tomatoes. While I am a lover of okra simmered in water ( I know you either love it or hate it) I grew up eating fried okra ,too. Not the deep fat fried kind that comes with more crust than okra. We’re talking pan-fried in a little oil and butter after coating the okra with cornmeal. YUM!

I have been looking for a waffle recipe that will have a bit of a crunch to it and I finally found one. It came from this vintage Betty Crocker Cookbook. If you don’t happen to have it in your collection, you really should find one on E-bay or your local used bookstore. It is a treasure. Inside you will find basic recipes that are tried and true. Betty Crocker and I go way back. When I was a senior in high school I received the Betty Crocker award. Many things have changed since then, but I am still the same overachiever when it comes to cooking.
