Cinnamon Roll Lab

1st Block Kitchen 1

If you’re in a hurry making Cinnamon Rolls from biscuit dough is the way to go.  It is quick to put together and taste so good.  This group of students had no big problems  putting these things together.  A couple of groups still need to work of kneading the dough.  They haven’t quite got the knack of how much to handle it to make the end product light and fluffy.  But, I really can’t complain because they were all better than usual.  I had none that could break out windows.

Cheese and Garlic Drop Biscuits

For our second lab of the semester we made these Cheese and Garlic Drop Biscuits.  They are so easy and quick to prepare.  Plus they are just plain delicious.  I am loving my students for this semester.  They are all eager to learn how to prepare all kinds of food.  I still have to work on a few students that are a little lazy about writing down the steps and the amounts of ingredients, but failure can be a good learning experience.

Sausage and Cheese Balls

I love these sausage balls!  Even though this  recipe has been around for a long time,  my students have requested me to make this recipe and post it. So here it is.  This is day four of no school because of the snow and ice.  What better excuse do you have to get in the kitchen?   I think that these were originally intended to be served as a party food, but here we serve them for breakfast.  Let them cool and place them in a freezer bag.  They freeze well for a month, but if your family is like mine they will not last near that long.

Cinnamon Rolls Made Easy

Cinnamon rolls cooking in the oven are just plain good.  The cinnamon and sugar melting together sends out an aroma that turns up the senses a notch and makes the mouth water.  But, if you’re like me and short on time cinnamon rolls made with yeast dough are not always an option.

Here is an alternative to the timely recipe that you can throw together in a matter of minutes.  They are delicious, too.

Butter Biscuits

  

I personally think that every good cook should be able to put good homemade biscuits on the table.  Now that I have said that let me say this.  I don’t think that biscuits are very healthy.  In fact they’re not very healthy at all, but man they are good!  Every so often you just have to have one or maybe two.  Last winter I made these buttermilk biscuits that were divine and in the fall I made these that are my old standby.  Well, I took my old standby and changed it up a bit.  These little bites of buttery goodness are easy to put together and good enough to serve at a dinner party.  Don’t confuse them with the butter muffins made with butter and sour cream.

Pecan Sticky Buns

School started last Thursday and look at this I am already in the cooking mode.  I could not wait.  Schedule changes have not even  been finalized and I  just had to show this group of very interested teens what was in store for them.  Anytime that I bake with cinnamon everyone appears at my door.  MMM it smells so good.  There is nothing like a little sensory blackmail to get them into my class and then there is no turning back!  Some of them are so funny.  They made comments like this, ”  This class is just like being in the audience of a Food Network Show. Do you feel like your on TV, Mrs. Lupo?”  I am telling you I had their undivided attention for the entire class period.

Cheese Biscuits and a Mission Accomplished – Vote Here

Today was our last lab for quick breads and  the students ended the unit with a bang!  All the biscuits that were made today were so good!  Biscuits are not the easiest bread to make especially for beginners.  At first you  are not quite sure how the dough should feel and how much to knead it.  And then there is always the question of how much flour to add to the dough to keep it from sticking to your hands.   I was very impressed when I talked with each group about what they learned.  Here are some of their comments

  • These are so easy to make.
  • They are better than the drop biscuits that we made from Bisquick.
  • We have all the ingredients at home.
  • Why would anyone buy those refrigerated things when you can make these?
  • You can make these really small , eat two and fool yourself into thinking you are eating more.
  • I had no idea that I could bake biscuits that tasted so good.
  • We can save money baking biscuits from scratch.
  • I want to make these for my mom.

 

So  my mission for this unit is accomplished and we are ready to move on.

Cinnamon-Raisin Biscuits and Vote!

Buttermilk Biscuits

I have been drooling over these biscuits for 2 1/2 years!  Why have I not made these sooner you ask?  It is a little bit of a change.  You see I have been making these since I was 12 years old.  They are good!   

My Gosh, I have  been cheating myself.  These biscuits are absolutely the best I’ve ever eaten.  And  I have tasted my share of biscuits.  2,000 to be exact!  I didn’t even  figure in the ones that I  baked nor the ones I’ve eaten at friends and family.  So I know biscuits.  WRONG!  These are incredible.  I first saw them in Southern Living in November of 2007.  I even pulled the recipe out to save and try later.  I just kept looking at it thinking, ” They can’t be that great.”     

My students made this recipe and I wanted to post something different. So here it is  Buttermilk Biscuits that got pushed to the back burner.  After all I have made buttermilk biscuits many times in my life. What’s the big deal?  It appeared again last month in Southern Living Our Test Kitchen Secrets.  Secret?  What could be so secret about making biscuits?
