On Valentine’s Day while most people were having lunch with their sweetie, I was making pancakes for my angels. I have been a little of an overachiever lately. Two recipes in one class period and I think that I have gone a little crazy. I have used Bisquick for years because it is easy and students that are new to the kitchen can handle it. But, have you seen the price of Bisquick lately? It is sky high! And according to the paper today we are going to have a huge hike in most grocery items as well as clothing because of the weather. Anyway, I made one from scratch and the recipe from the Bisquick box. Guess what the scratch recipe won hands down. Not surprising to me.
Cinnamon rolls cooking in the oven are just plain good. The cinnamon and sugar melting together sends out an aroma that turns up the senses a notch and makes the mouth water. But, if you’re like me and short on time cinnamon rolls made with yeast dough are not always an option.
Here is an alternative to the timely recipe that you can throw together in a matter of minutes. They are delicious, too.
Before attempting our second lab making biscuits from scratch I spent two days demonstrating . One class period I made these Cheese Garlic Drop Biscuits. They were a hit, but the Cuisinart food processor was a bigger hit. Many of them had never seen one used and they were fasinated by it. I love my Cuisinart that I have had for at least 25 years. I have only had to replace the bowl top for $20 otherwise it has been worth the money. I talked quite a bit about shopping for food processors. By the way, buy one that will last. If you get a really good one it will probably outlast you. The cheaper brands have a smaller motor and will eventually burn up and have to be replaced. I personally think that every good cook should be able to put good homemade biscuits on the table. Now that I have said that let me say this. I don’t think that biscuits are very healthy. In fact they’re not very healthy at all, but man they are good! Every so often you just have to have one or maybe two. Last winter I made these buttermilk biscuits that were divine and in the fall I made these that are my old standby. Well, I took my old standby and changed it up a bit. These little bites of buttery goodness are easy to put together and good enough to serve at a dinner party. Don’t confuse them with the butter muffins made with butter and sour cream.
Pancakes are a favorite around our house. I usually stick with the same recipe. This is my absolute favorite recipe for pancakes and to me these beat those made from scratch every time. Now that’s just my opinion. But, what am I to do? I can’t keep blogging about the same recipe every semester. I have to reach beyond my comfort zone. Here’s what I did this time around. I demonstrated this Oatmeal-Brown Sugar Pancake recipe found on the Betty Crocker site. I liked it. The brown sugar and oatmeal give this pancake a great flavor.
