Egg and Sausage Breakfast Casserole

Recipes that are made ahead of time are some of the best to have in your back pocket.  Just pull them out when you’re having company or heck  just used them to treat yourself.  I hate to be rushed and anything that can be done the day before makes life easier.  I have been using this recipe for years.  It is our traditional Christmas morning special.  Many breakfast casseroles call for as many as a dozen eggs and this one only uses four eggs.  That’s really reducing the amount of cholesterol which is a good thing.

Nice and Crispy Waffles

I have been looking for a waffle recipe that will have a bit of a crunch to it and I finally found one.  It came from this vintage Betty Crocker Cookbook.  If you don’t happen to have it in your collection, you really should find one on E-bay or your local used bookstore.  It is a treasure. Inside you will find basic recipes that are tried and true.  Betty Crocker and I go way back.  When I was a senior in high school I received the Betty Crocker award.  Many things have changed  since then, but  I am still the same overachiever when it comes to cooking.

Pancake Lab

I cannot begin to tell you the excitement that was in the air in my classroom for the second lab of the semester!  I have not seen such interest in a long time.  Most students were in the classroom early washing hands, getting out equipment, and measuring ingredients.  All groups worked well together trying not to ask me as many questions as this lab.  There was a calmness in the air as if everyone knew exactly what they were doing.  The students were much more confident washing dishes, setting the table, and eating with their group.  All of them were working against the clock.  Class members had to be ready to serve in 45 minutes.    I have done this lab many times in a 55 minute class period so I knew from past experience that it could be done. Since the classes are 90 minutes long they sometimes will drag activities out needlessly.   All groups I am happy to report  were seated in less than forty minutes.  Continue reading

Oatmeal-Brown Sugar Pancakes

Pancakes are a favorite around our house. I usually stick with the same recipe. This is my absolute favorite recipe for pancakes and to me these beat those made from scratch every time.  Now that’s just my opinion.  But, what am I to do?   I can’t keep blogging about the same recipe every semester.  I have to reach beyond my comfort zone.  Here’s what I did this time around.   I demonstrated this Oatmeal-Brown Sugar Pancake recipe found  on the Betty Crocker site.  I liked it.  The brown sugar and oatmeal give this pancake a great flavor.

Pecan Sticky Buns

School started last Thursday and look at this I am already in the cooking mode.  I could not wait.  Schedule changes have not even  been finalized and I  just had to show this group of very interested teens what was in store for them.  Anytime that I bake with cinnamon everyone appears at my door.  MMM it smells so good.  There is nothing like a little sensory blackmail to get them into my class and then there is no turning back!  Some of them are so funny.  They made comments like this, ”  This class is just like being in the audience of a Food Network Show. Do you feel like your on TV, Mrs. Lupo?”  I am telling you I had their undivided attention for the entire class period.

Blueberry Muffins with a hint of Lemon

 

Today is the first day of my summer vacation. It is a gorgeous day here in Atlanta.  There is not a cloud in the sky and the humidity is almost nonexistent.  Now this is not going to stay, but I am enjoying it while it is here.  To celebrate my new unfilled time I just had to make these blueberry muffins with the first blueberries I have received this season.  These were shipped here from Baxley, Georgia.  When I saw the address I was flooded with childhood memories of the beach.  Baxley is about an hour south of McRae which is my hometown.  Driving through Baxley meant that we just had to travel through Jesup and we would arrive at our destination St. Simons.  Then my sister and I would have all the pool time and beach time we wanted.

French Toast

French Toast looks so sophisticated, but it is simple to put together.  This is one of my favorite breakfast foods.  When I was in high school it was my breakfast choice almost every day.  I did not use a recipe nor did I make it fancy.  All I did was whisk an egg with a little milk , dip white bread in the egg and cook in a cast iron skillet with a little butter. I drizzled with hot syrup and enjoyed with hot coffee.  

Here is a recipe that I have been using for years with my classes.  I prefer at home to make French toast the night before and pop it in the oven the next morning especially if we have company!  It is just quicker.
