Crescent Rolls filled with Chocolate

Pain Au Chocolat is one of my favorite things to eat.  Melted chocolate in a buttery croissant is just plain sinful.   I love them calories and all.  I don’t make them from scratch and it’s not often that I get them from a French bakery.     Here is a great substitute that you can make in less than thirty minutes.  It’s not the same rich, flaky, and buttery croissant as you might find in a French bakery, but it is a close second.  You will get no complaints when these pop out of the oven!

Angel-Hair Pasta with Fresh Tomato Sauce

This could be the absolute best pasta dish that I have ever made.  It’s one of those dishes that you don’t want to stop eating.  It is just amazing.  The recipe has  been waiting  for some great home-grown tomatoes to put with my fresh basil.  It’s so simple yet the flavors and texture scream complexity.  A perfect meal  for summer.

Parmesan Pan Baked Potatoes


This is the perfect side dish.  Not just because it is delicious, but it is lightning fast to prepare, low-calorie and a good recipe to engage some help from everyone in the family.  Four medium potatoes requires only 2 tablespoons of butter and with the addition of either parmesan or Italian bread crumbs they pack a lot of flavor.  This recipe has been a standby at home as well as in my classroom and is enjoyed by everyone.   There is a trick to making them that many of my students don’t get the first time.  Cooking times can vary wildly!  All medium potatoes are not created equal so the cooking times can be very different.  An overcooked potato is not a pretty site!

Cream Puffs filled with Whipped Cream

Cream Puffs or Choux Pastry can be intimitating to some when it comes to baking, but yet they are really simple.  It could take a couple of times baking them to get the hang of it, but on the positive side even the bad puffs are good! My high school students were amazed when I made these melt in your mouth puffs of cream. The topic of the day is leavening agents and this particular one is steam.  The amount of steam could be a problem , but I will cover that later in some hints to follow when making the perfect Choux Pastry.

Angel Hair Pasta with Spinach, Shrimp, Tomatoes and Basil

I love this dish!  Oh My!  It has a lot of flavor.  It is very quick to make!  What else do you want?  Someone to make it for you?   This recipe is a cinch .  You will be in and out of the kitchen in no time.  The compliments will come flying your way and you will be wondering what happened.  It is just so easy to make this dish and it is amazing that it just has flavors that you would not imagine.  I was totally shocked.

Jambalaya – Made Easy

The next two months will be crunch time for almost everyone.  The holidays are hectic. Recipes like this Jambalaya will make your life easier.  This is a no brainer.  It takes very little cooking skills and I love it because it goes straight to the oven.  Which means that you can address holiday cards, call your mom, wrap gifts, do laundry or just sit for an hour and read!  Sounds good doesn’t it?
