Angel Hair Pasta with Spinach, Shrimp, Tomatoes and Basil

I love this dish!  Oh My!  It has a lot of flavor.  It is very quick to make!  What else do you want?  Someone to make it for you?   This recipe is a cinch .  You will be in and out of the kitchen in no time.  The compliments will come flying your way and you will be wondering what happened.  It is just so easy to make this dish and it is amazing that it just has flavors that you would not imagine.  I was totally shocked.

Washing Dishes and Knives While Making Paula Deen’s Szechaun Chicken

Making this Paula Deen dish my students learned many skills. Some of these skills I thought were just a given.  You know like washing dishes and knife safety.  Either I did not do such a hot job when we discussed these topics or in the excitement of preparing and eating such a delicious meal they did not rank up there with what was important.  Anyway we all learned from our mistakes and I still have all of my fingers!

Jambalaya – Made Easy

The next two months will be crunch time for almost everyone.  The holidays are hectic. Recipes like this Jambalaya will make your life easier.  This is a no brainer.  It takes very little cooking skills and I love it because it goes straight to the oven.  Which means that you can address holiday cards, call your mom, wrap gifts, do laundry or just sit for an hour and read!  Sounds good doesn’t it?

Cook off for the Perfect Macaroni and Cheese

 

The perfect macaroni and cheese dish starts with a white sauce made with melted butter, then flour, salt and other seasonings such as mustard are whisked together with mik.  It is then cooked until thick.  Cheeses of all types can be added, but the king of cheeses to use is Cheddar.  Don’t go to far with the cheddar for the extra sharp variety can cause the macaroni to have a mealy texture.  We found this out in our lab last week.  I picked up two packages of extra sharp cheese and  three of the groups’ macaroni was a little mealy.  So it was no fault of theirs.

Smoked Sausage with Tomatoes

This dish is one of the easiest  I have made that packs flavor just about too good to describe.  When I made it for my classes this week I am telling you that people were coming out of the woodwork to find out what I was cooking.  It was so bad that my students said, “Mrs. Lupo we are just going to have to close the door all these visitors  stopping by are very distracting!”  This dish smells so good! It is unbelievable that just two ingredients  can meld such a rich flavor in such a short time.  I was surprised and so were my students.  Trust me on this one.  It is a keeper!    Continue reading

Basic Pizza Sauce

I am really a snob when it comes to pizza. I like great pizza.  Right now I am on a mission to make the best pizza.  The total package has not come together yet, but I think that I have found part of the eluding pizza – the sauce.  Back in July GI Joe took me the New York City for my birthday.  We stayed at the lovely Waldorf Astoria and the concierge knew her stuff.  The restaurants she suggested were some of the best I have been to. Pan Fried Pork Cutlets

 

Every once in a while I must have a down home country-style meal.  You know what I mean.  Meat with lots of vegetables plus bread, preferably biscuits.  I don’t cook this type of meal often, but it is the type of meal that reminds me of my grandmother.  She always had this meal ready on any given day. That’s not going to happen in my house for many reasons.  What’s a girl to do that religiously eats a salad for lunch to get a fat fix?  The meal I prepared with these pork cutlets is one great way to get the fix!  Some of you are thinking that this nutrition teacher has gone off the deep end.   Not quite, this is my reward for the many visits to the gym and eating in moderation.

Shredded Beef Tacos with Guacamole

This time of the year I am always trying to keep my life organized and stress free.  That’s really funny.  No it is next to impossible.  Imagine trying to organize meals for two places at the same time and then doing all the grocery shopping, cooking, serving, and cleaning.  It is enough to make the most organized person crazy.   Here is a great recipe for times when you want a great meal, but are short on time.   I love my slow cooker for certain foods and this is one of them.  And another thing this recipe takes really no cooking skills at all.   What could be better?

Pan-Grilled Salmon with Red Pepper Salsa

The Sockeye Salmon have just about done it’s run.  It will be gone soon.  I hate that.  I love this fish.  The taste, the color, it is all good.  I am tempted to go to Publix tomorrow and buy up all that they have and freeze it.  I really might just do that!
