Hamburgers Made Ina’s Way

I am a big fan of hamburgers.  There is nothing better than a burger straight off the grill with a toasted bun topped with lettuce, tomato, and some good mayo.  Know matter how you like yours dressed up, first you have to get the burger right.  I think after years of trying I have found the best burger ever thanks to Ina Garten’s cookbook Barefoot Contessa Back to Basics.  When I made these a couple of months ago I thought maybe it was just a fluke that they were out of this world.  I made them again this weekend and they were fabulous.  They are very simple.  Give them a try and let me know if you get the same results.  Ina’s recipe calls for Niman Ranch ground meat which you can buy in some grocery stores in this area or you can order it on-line.  It is beef grown all naturally without antibiotics and primarily grass-fed.  My beef came from Tommy Waldrop here in Douglasville.  Anyway, start with some good ground beef and the rest is just a breeze!

Fish Fillets with Olives and Oregano

I’m always looking for a light dish that packs a lot of flavor and that’s quick.  I don’t think that I’m asking for too much.  After all,  working out at the gym or going to tennis practice takes a chunk of time.  I think it’s important to work out but, let’s face it a girl has to eat.  I simply loved these fish fillets.  Gourmet knows how to make me happy in the kitchen!   Continue reading

Shrimp and Andouille Sausage Gumbo

I’ve made gumbo several times in my lifetime, but not the real Cajun type with a roux.  There is just something intimidating just in the word roux.  Not very many people know how to pronounce it and then not very many know what the meaning is.  The term is in my high school textbook that I use with my class.  It is hilarious to hear  students pronounce it.  Recently after Katrina we have many students from New Orleans.  You should see the looks they give the Southerners from Georgia.  Don’t you know anything?  A roux?   Well, I fall into that category.  I have never made a real roux.  Yeah, one for macaroni and cheese sauce or for a rich brown gravy, but for a gumbo?   NO!  My mother never once made gumbo that I can remember.  She could make a mean red-eyed gravy and macaroni and cheese to die for, but no New Orleans style roux.   I love gumbo and when I recently found a meat market that sells the best Andouille sausage I had to try my hand at it.  I must say that a roux is quite easy.

Pan-fried Pork Loin Chops

I am the first to say that change is a good thing.  It gets you out of a rut so life can be more exciting. Let me tell you that I have definitely been looking at life through a huge whirlwind!   In the last ten days I have been hit with a tremendous amount of change and life as I once knew it  has changed.  I am now teaching forty-five minutes classes instead of ninety minute blocks.  My students will have my class for an entire year opposed to a semester.  Usually my enrollment is fifty-six students per semester.  I now have one hundred twenty-eight bodies in my classes.  I’m teaching four classes and not two classes.  And I am doing all of this before noon!   I am racking my brain to come up with ways to have great labs in my classes.  I have not determined what I can do.  No where in my college career or in my many years of teaching have I been taught how to conduct a food’s lab in forty-five minutes.  I am determined to do it though.  I cannot disappoint all of these teens that are so eager to learn how to prepare good food.  Stay tuned for the weekly saga.  I am sure that it will be interesting.   In the meantime here are some great pan-fried pork loin chops that are quick, tender and just down right good.

Blackened Tilapia Fillet

I’ve not always shopped at Publix.  In fact here in our suburb of Atlanta we have not always had a Publix.  When vacationing in Daytona Beach , Fla. we  fell in love with Publix.  I cannot say it was because of the pristine clean environment or the wonderful produce,  it was the bakery.  For the record it was their apple turnovers with the sugar on top.  We were in heaven!  We now have a Publix and guess what we stopped buying the turnovers.  Not because they were bad, but we did not want to buy a new wardrobe.    Publix is my friend.  I really like the fact that they give you a new recipe every week that is fast to fix and all the ingredients are right there for you to pick up.  Psychologically they really know what to do that will make you just automatically buy the right stuff!  They time it perfectly.  You go in the store starving!  The aroma of good food just hits you in the face. Then you  buy whatever they want you to buy.  I am just saying that their marketing department should be paid big bucks because they know how to work it.  Some of their recipes are fabulous!  This is one of them.

Angel-Hair Pasta with Fresh Tomato Sauce

This could be the absolute best pasta dish that I have ever made.  It’s one of those dishes that you don’t want to stop eating.  It is just amazing.  The recipe has  been waiting  for some great home-grown tomatoes to put with my fresh basil.  It’s so simple yet the flavors and texture scream complexity.  A perfect meal  for summer.

Greek Salad with Grilled Chicken

A couple of weeks ago our family went to a long time friend’s wedding in Greenville, SC.  It was a beautiful wedding and a really fun time.   We arrived on Thursday and had dinner downtown.  I was awestruck at the downtown area.  It is just absolutely beautiful.  Big oak trees line the street making a cool walk even on a hot summer day.  The sidewalks are large enough for restaurants to have outside dining.  And who doesn’t love outside dining?  I just loved the atmosphere in the area.  On Friday we were doing a little window shopping and walked by a group of young men having what looked like a business lunch and the food looked absolutely wonderful.  So we got a table for two under one of the huge oak trees and enjoyed the cool breeze.  And this is when I had the best Greek Salad with grilled chicken I have ever had.  In fact I enjoyed it so much I ordered it again on Saturday for lunch.  I knew than that I had to make this at home.  How could I live without such a mixture of goodness?

Chicken Salad for a Hot Summer Day

I love summer for the obvious reason.  I don’t have to work.  I can for the most part do whatever I want to whenever I want to.  Who would not love this? It’s a great perk for the teaching profession!    Teachers are so busy during the year it is not so easy to do many big projects around the  house.  So every teacher that I know has a to do list just for the summer.   And I am one of them.    This summer my list is short.   I have two that I would like to have accomplished before school starts August 1.  We have lived in our new home for six years and I cannot believe how much I have accumulated in that time.  My pantry and my closet need a complete over haul.  Those two projects are at the top of my list.  Okay, let’s see what’s cooking in my house on the lazy hazy days of summer!

Sophisto Joes

Who doesn’t love a great sloppy joe?  When you bite into the toasted bun that has soaked up the sauce it is just plain good.  I have some great childhood memories of sloppy joes, but have not made them in years.  When I saw this recipe in Gourmet I just had to make it and I was not in the least disappointed.  These are as the name says a little more sophisticated than Manwich. Serve them up with some of your favorites whether it might be chips or fries.  I thought these pan-fried Smashed Potatoes and a salad were a great choice.

Stuffed Shells and a Lab

Here is a great stuffed shell dish that I put together with what was in my refrigerator.  Really I had a beautiful bunch of spinach that came in my CSA box that needed a good home and this is what happened.  Jumbo shells were stuffed with ricotta cheese , small amount of Italian sausage, and topped with a simple tomato sauce.  They were lighter than most shells that I have made because they lacked the addition of mozzarella cheese on top.  You could certainly add it if you’d like.    One of the most popular recipes on my blog now is one that I have been using for about ten years Stuffed Mexican Shells.  Check out what my students had fun doing in lab last week.  Looking at their photos you can tell that they had a little trouble with the recipe, but even so they all were very edible.   This is so rewarding!  I have had a half-dozen students bring me their phone with pictures of these stuffed shells that they prepared for their family.  Now I have done my job.  They are cooking for their families and reaping the rewards.  Teaching at its best!  Continue reading
