A good salad make me happy… very happy! This is a good one. Butternut squash has not shown itself on our menus here at our house very often. I do house “somewhat” of a picky eater. I do love this butternut squash soup. It’s good enough to drink with a straw. And this Roasted butternut squash may not make it to your table. You can’t help but nibble on it right out of the oven! So when I was perusing my cookbooks looking for a salad for my upcoming book club I found this perfect salad to serve with this soup.

Banana Nut Muffins with Bran
Look no further for I have found the perfect breakfast muffin! It is healthy and taste fabulous. Yes, I would put it right up there with the best banana nut bread I have ever made. It is just that good!
When bananas start to go bad I peel them and place in a freezer bag. The freezer does some kind of magic to the bananas. It’s almost like the best banana liqueur that exists. In other words freezing really develops their flavor. Frozen bananas that were calling out to me, “Use Me, Use Me!” started this whole search for a recipe using bananas, buttermilk, and bran buds. This is what I found.

Spaghetti Squash Gratin with Walnuts and Bacon
This gourd of a vegetable is all new to me. I had never tasted it nor cooked it until it arrived in my CSA box right before Thanksgiving. I had no idea what to do with it. Luck would have it that one of my favorite blogs Clotilde’s Chocolate and Zucchini just happened to post this Spaghetti Squash Gratin that same week. It looked delicious so I just had to try it. I am so glad that I did because it is fantastic and super easy! In fact the hardest part is cutting the squash in half!
