How to Make Your Own Taco Seasoning

I cannot think of many people who don’t just love tacos.  I know that my high school students love them.   They are quick to prepare and fun to play around with the toppings making them versatile for any picky palate.  So here is a great seasoning to keep on hand because most everyone keeps ground meat in their freezer.  So now you have dinner in a flash.

Taco seasoning that you buy in the packet can be somewhat expensive and with a list of ingredients a mile long who really knows what’s in the packet.  I love this Taco Seasoning from Alton Brown.  You can make this in advance and store in an airtight container.  It is ready when you are!  The seasonings all store for a long period of time so you don’t have to worry about it going bad.  But, it won’t last long!

A word of caution to all of you that are going to use this seasoning – the meat will be on the salty side.  After assembling a taco with all of its trimmings I did not find it too salty at all.  Though for the first time you  might want to consider cutting the salt in half.  The recipe calls for 2 teaspoons of kosher salt and I feel that 1 teaspoon would be enough.   Especially if some of your add ons like guacamole or salsa are also salted.  Use your better judgment.   If needed, you can always add salt later.  Otherwise, this is the perfect seasoning for any taco.

Taco Seasoning from Alton Brown

Serves:
1/4 cup plus 2 tablespoonsIngredients:

  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons cornstarch
  • 2 teaspoons kosher salt ( cut in half and it will still be great)
  • 1 1/2 teaspoons hot smoked paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
Directions
Put all of the ingredients in a small jar and shake to combine. Store in an airtight container for up to 6 months.
Use about 2 tablespoons of the seasoning mix for 1 pound of ground meat with about 1/4 cup water.  Let the mixture simmer until the liquid is evaporated.
