Taco Soup

It doesn’t have to be a cold, rainy or snowy day for me to love a hot bowl of soup.  I love soup on any day anytime!  With much skepticism I made this soup not really expecting the flavor that it produces.  Using packaged taco seasoning,  ranch dressing, and two kinds of olives you have to admit that it is a wild combination.  But, it works and it works quite well.
For the inexperienced cook this is just the recipe that will make you a successful cook.  You’ll get so many compliments that you won’t be able to wait to get back in the kitchen and try another dish.  It is just that easy and so good!

I’m not surprised that the dish is fabulous even with it’s odd ingredients because  it’s Paula Deen’s.  Paula has made something special in this Taco Soup.  Now to me it really taste nothing like a taco, but it packs a lot of flavor and will keep you coming back for more.  GI Joe and I ate all of it and it makes a boat load of servings.  I was disappointed there were no leftovers to freeze so I’m just making more to put in the freezer to have on hand when I need something quick.  So follow me to the grocery store and let’s make some of the best soup that I have had in a long time.  By the way you can put this in the slow cooker.  Brown the ground meat the night before or even brown it and freeze it to have ready when needed.  In the morning before work place the browned meat and onions in the slow cooker then add all the cans of beans and tomatoes with the packages of seasonings.  It will have your house smelling delicious when you walk in the door after work.  Just a side note here.  I have found that some soups and stews are better the next day, but this one is great after simmering for only one hour.  Catch you later I’m making this again.

Yield about 16 servings
  • 2 pounds ground beef
  • 2 cups diced onions
  • 1 (15 1/2-ounce) cans pinto beans
  • 1 (15 1/2-ounce) can pink kidney beans
  • 1 (15 1/4-ounce) can whole kernel corn, drained
  • 1 (14 1/2-ounce) can Mexican-style stewed tomatoes
  • 1 (14 1/2-ounce) can diced tomatoes
  • 1 (14 1/2-ounce) can tomatoes with chiles
  • 2 (4 1/2-ounce) cans diced green chiles
  • 1 (4.6-ounce) can black olives, drained and sliced
  • 1/2 cup green olives, slicedl
  • 1 (1 1/4-ounce) package taco seasoning mix
  • 1 (1-ounce) package ranch salad dressing mix
  • Corn chips, for serving
  • Sour cream, for garnish
  • Grated cheese, for garnish
  • Chopped green onions, for garnish
  • Pickled jalapenos, for garnish

Directions:

  1. Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a stockpot.
  2.  Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and  simmer over low heat for about 1 hour in a pot on the stove.
  3. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.
  4. This can be prepared in the slow cooker for 8 hours.
  5. Enjoy!
