Knowing how to make basic pudding can open many other doors. What about coconut cream pie? Or a tart lemon meringue pie? Does chocolate cream pie make your mouth water? All of these follow that same basic steps so when you master just plain vanilla pudding all the other are just a “piece of pie”.

When my classes made banana pudding this semester the pudding was a cinch, but the meringue caused a few problems. The reason several of them had flat meringues was the addition of the sugar before a foam was beat. There were several groups that overindulged their mixers producing meringue that wanted to separate into curds. Even with the few problems all the pudding was very good.
