Layered Taco Salad

I love Mexican food and there is no other words to describe this salad but fantastic!  The salad part is just like any other salad with lettuce, tomato, olives, cheese, and avocado.  The stars of this main dish are the meat and the dressing so don’t change a thing when you make this because they are perfect as they are.  This is an easy to prepare so you will win all around.  The most time-consuming is chopping the onions, peppers, lettuce, tomatoes and cilantro.   It does make a lot.  I mean that I served 10 people and had 2 servings as leftovers.  The leftovers are still good the next day if you don’t add the dressing to the top.  I do like it with some heat so I put really  hot jalapeno peppers with seeds and all in there.  You adjust the heat to your taste.  I love serving this with some crunchy tortilla chips and homemade Pico de gallo.  Yummy!   Make this for your next get together,  serve it on your deck or patio or take it to  your friends to enjoy.  They will thank you!

Strawberry Salad with Cinnamon Vinaigrette

Strawberry Salad

Here is a great summer salad that you will want to make with all the fabulous strawberries that we have now.  These flavors from strawberries, mandarin oranges, and avocados  just go together to make a fantastic combination that I would not ordinarily put together.  And the avocado in this salad  oh my! If you are looking hard to see the avocado you won’t.  I served this salad to my book club last month and in the hustle and bustle to make a photo without holding up serving the food I forgot to add the avocado.  But, don’t you leave it out thinking that it will be just as good without it.  It won’t be!  You’ll miss that buttery flavor.  Trust me.  I love this Cinnamon vinaigrette.  It is a lovely salad dressing and a snap to make.   I really cannot believe that today is July 1.  In 30 days school starts and I must get busy on my To Do list which is absolutely nothing!  Enjoy your summer.

Corn, Avocado, and Tomato Salad

This has been one of my favorite salads since discovering it about six years ago.  With corn and tomatoes at their peak the salad will be fantastic, but it is great in the winter using frozen corn and grape tomatoes.  To me grape tomatoes are pretty good most anytime during the year.  In fact that is what the original recipe calls for.  I just like using some of the home-grown tomatoes from Waldrop’s that I truly love.   All of these flavors just melt together corn, tomatoes, avocado, red onion, lime juice and cilantro.  They  just go together for a sumptuous salad that you will never forget.  Don’t think just salad because it  will go with most any main dish or I love it with fish tacos.  YUM!  Now pull out some of summer’s fresh corn and enjoy a real treat.
