Cranberry Sauce

I really hate to admit that before now I have never made homemade cranberry sauce.  I really don’t know why not.  This is the easiest sauce to prepare.  If you’ve never made it you should give it a try.  Pick up a couple of bags of cranberries that are in season now and you need 15 minutes time and its done. 

The blogosphere has been full of recipes for all kinds of cranberry sauce, but this one from A Candadian Foodie is very informative.  I followed her recipe to a T and I loved the results.   So here is all you do.

  1. In a heavy saucepan place 1 12-ounce bag of cranberries, 3/4 cup of sugar and enough water to almost cover the berries.
  2. Bring to a boil at medium high heat and stir. 
  3. Turn heat down and maintain the boil.  Boil for 10 minutes.
  4. Place in container and refrigerate.  According to Valerie the sauce will keep until Easter.  Mine will not last that long so I will be pulling out the bag of frozen berries and making more of this great sauce.

  50. I always buy a few extra bags of cranberries and put them in the freezer to use later in the year. My niece doesn’t like the berries so after I make it I force it through a strainer. The juice jells and tastes delicious without the berry skins.
