Balsamic Vinaigrette

Salad is my life.  For lunch most everyday of my adult life I have eaten a salad along with some protein whether it might be grilled chicken or a hard-cooked egg. I just love them!   Salads are the perfect way to include all the servings of vegetables and fruit that are needed daily. Don’t get me wrong that’s not the only reason I love them.  There’s just so many ways to make salad.  You can never get tired of them.   The downside to salads for some people is the addition of too much dressing turning a very healthy choice into a heart attack.  I made this Balsamic Vinaigrette for my students.  They loved it!

They were amazed that salad dressings are so easy to make and taste much better than bottled ones.  So in less than 5 minutes you too can put this on your next salad.  I mixed the dressing in a small jar and shook to mix, but whisking in a bowl will be perfect also.  Two tablespoon of dressing is considered a serving so this will be enough for about 10 salads.  To serve my class I used about 15 cups of salad greens  and the entire jar of dressing.    Enjoy!

Balsamic Vinaigrette yield 2/3 cup

  • 1/3 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 garlic clove, minced
  • 1/2 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Whisk together all ingredients in a small bowl or shake together in a small jar.  Cover and store in the refrigerator.

Oh yes, once you make a homemade dressing, it’s so hard to go back to store bought! We make our own too. I have a balsamic that’s just slightly more complicated than yours — has crushed fennel and Parmesan cheese. I once had some goat cheese, pecans, and cranberries on my salad and have been eating/serving it that way ever since. SO good!

This is a much more affordable way to do things, and much healthier as well. I always thought it was too much work to make your own dressing but I see now that it’s quite simple, if you over do the vinigar or put too much, the dressing will not come out right, it will be too strong.

I am personally not a fan of the balsamic vinigerette. But it is very easy to make and the romaine and red leaf lettuce complement each other very well!

This is my absolute favorite salad dressing! It is the only dressing we ever use in my home. I never thought to add salt, pepper, the garlic clove, or sugar! We simply use balsamic vinegar and olive oil! I love the way you prepared it though, so I’ll definitely be making it at home for my parents to try.
