Every body loves muffins or cupcakes. To me they are one in the same.  These muffins/cupcakes will knock your socks off. They have the best ingredients butter, sour cream, bananas and chocolate. You know there’s nothing wrong with a little chocolate in the morning. It does a girl good!  All kidding aside these are great. To take away some of the guilt pair them with a big bowl of fresh fruit and Greek yogurt. That’s one great way to start your morning.

This is another of Katie Workman’s recipes. It’s super easy to put together and really turns out a moist and rich muffin. So next time you’re looking for something great to do with two bananas that are two hours from heading to the trash then this is what you need to cook up in you kitchen.   You will make somebody happy.

Sauteed Corn, Spinach, Bacon, and Scallions

Sauteed Corn

School is now is session!  Three days mimicked ten days.  Schedule changes, reading the handbook, going over rules and regulations made for boredom.  I did treat my classes Friday with these Fudgy Rocky Road Bars.  They got rave reviews and some of my new students tried them out on their families and friends this weekend.  That’s success!  I will keep you posted about my classes, but so far so good.

Last night I tried this side dish that I have had bookmarked all summer from Katie Workman The M0m 100 Cookbook.  It’s a great way to use the fresh corn that is so plentiful now.  The dish is packed with flavor.  I’m talking bacon, red pepper, shallots, spinach and corn.  It will be a great addition to any entre, but you know what I think it would be perfect to stand alone.  Just eat the whole bowlful with nothing else.  Heaven.

One Skillet Cheesy Beef and Macaroni

This recipe is nothing fancy, but it will be one that your family will ask for time and time again.  You know the one that makes your husband smile when he finds out what’s for dinner or when half your son’s baseball team shows up at your house and they are all starving!   It’s quick, easy, and above all cheesy good!  Again, I am loving Katie Workman’s Cookbook The Mom 100 Cookbook.  This is one of Katie’s recipes that I have made many times.  It is so good and it will be a favorite of yours once you put it on your dinner table.

Corn Chowder

I woke up this morning and found snow on my deck. That’s just wrong for March.  Isn’t spring just around the corner?  Well, anyway it is a good excuse to make this wonderful corn chowder from Katie Workman.  I just love this cookbook that I purchased at our school book fair this year.  It is filled with easy and scrumptious recipes that the whole family will enjoy.  Even if you’ve got some picky eaters in your midst she handles that, too.

Crunchy Chewy Granola

I hate it when I find just the right shade of lipstick and  you are standing at the cosmetic counter glaring at the salesperson as they say to you with a smile “Sorry, but the color has been discontinued.”  What?  Tell me you are kidding?  It has been brought to my attention many times that I should buy two of everything that I love.  You know that special t-shirt, sweater, jeans, and the list goes on.  So you know where this is going.  I am a granola girl.  I love it with cold skim milk in the morning, for a snack, or dinner.  More than once or twice I have fallen for a certain brand and out of no where production of this wonderful product stops.  No one calls me.  No one asked my opinion.  It just stops appearing on the shelf.  It’s sad.  Now I’m doing what I should have done a long time ago and I am making my granola.  Well, really it’s not mine but thanks to Katie Workman I can have my favorite granola anytime I want it.   So can you and you will love it!
