Everyone needs that one appetizer that can be made it a flash. You know when you just don’t have the time to make anything really fancy. This bean dip is just that. Most of the ingredients probably can be found in your kitchen right now and if not just pick up the rest next time you’re shopping. You can put this together fifteen minutes before you walk out the door. But, it can be made three or four hours in advance if needed. I have carried to my tennis matches and get togethers for years and it is always a hit. Even those with no cooking skills can impress your friends because it looks beautiful and taste great. You know that everyone just loves a good dip!
Here’s how to put it together:
Spread one can of Frito Lays bean dip on a platter. Cover with 1/2 cup of sour cream. Fat-free sour cream works fine. Sometimes at this point I will layer with quacamole. Then cover with some really pretty shredded green lettuce. I used green leaf here. When I have been in a huge hurry I have used bagged shredded lettuce, but the color is not as pretty.
Next chop some really good tomatoes. You know the ones we’ll be eating here in Georgia in a few months. I used some tasty grape tomatoes here and sliced them in quarters topping with some sliced black olives.
Layer with the shredded cheese or cheeses of your choice. I used Monterey Jack with peppers and topped the whole thing with some sliced green onions.
Seven Layer Bean Dip Yield 8-10 servings (can be doubled easily)
- 1 can Frito Lay Bean Dip
- 1/2 cup sour cream
- chopped lettuce
- 1 chopped medium tomato ( I used grape tomatoes)
- 1/2 small can of sliced black olives
- 1/2 cup of shredded cheese
- 3 chopped green onions
- corn chips
Spread bean dip on a plate. Spread with sour cream. Top with chopped lettuce, tomatoes, olives. Cover with cheese and top with chopped green onions. Enjoy with corn chips!
It doesn’t get any easier then this! What a great dip!
i like the potential for versatility here–for example, i’d use peppers instead of olives and cilantro instead of green onions. great cheese choice. 🙂

Beans don’t excite me therefore, I won’t eat bean dip. Somebody in my family may and might want me to make this for a little get together sometime. I did learn that this recipe doesn’t take a long time to make nor does it look as if it would make a big mess!
