		<description><![CDATA[These cookies bring back many memories, the &#039;Lady Finger&#039; recipe has been passed on among southern circles 150+ yrs, a true holiday treat.

Rather then using plain flour, regular sugar or butter, our recipe calls for cake flour, using confectioners sugar (powder sugar) in place of  regular sugar and margarine.  We also use less vanilla.

Recipe yeilds 2 1/2 to 3 doz, depending on size of cookie you roll.
Bake @ 350
1 Box Swans Down Cake Flour
1/2 Box Confectioners Sugar (powdered sugar)
4 cups pecan peices (cutup)
3 tsp (teaspoons) vanilla flavor
1 1/2 pound margirine (soften)
Mix;
Cake flour, powdered sugar, vanilla flavor, margarine well (using hands).  Put pecans in last.  Roll &amp; press dough in hand to make finger, place parchment paper on cookie pan, placing cookies on paper.  Bake 15 minutes or until light brown.  I usually let the cookies cool before rolling in the powdered sugar.]]></description>
